Dinner for One, Please!

It’s 6 pm and you just got home from class. You need to shower and start diving into the pile of work due tomorrow; there’s simply no way you can fit dinner into this crazy schedule, right? Wrong! College is fast paced, but that doesn’t mean you can’t have easy, fast and fun dinners every night. Here are a few quick “dinner for one” ideas for any day of the week!
 

Grilled Cheese Nation
Grilled cheese is probably one of my favorite foods, and there are so many options to turn this simple sandwich into a delicious treat. American or Cheddar cheese melted between two slices of grilled white or wheat bread and served with a creamy tomato soup is an instant classic, taking 10 minutes tops to make! With an easy preparation and clean up, grilled cheese and tomato soup is always a classic.
 
Want to mix up this tasty fave? Spread pesto onto one of the pieces of bread and add some sliced brie. Serve with hot tomato soup and enjoy!
 
Another great grilled cheese variation is the avocado grilled cheese. White or wheat bread with mozzarella cheese, a sliced avocado and a few slices of pepperoni are perfect for the avocado lover.
 

Bananas for Peanut Butter!
If you love bananas and love peanut butter (And lets’ face it, who doesn’t?) you will be obsessed with this easy sandwich! Using the bread of your choice—my preference is wheat—toast the two slices and spread peanut butter over one of the them. Cut up a medium-sized banana and place them on top of the peanut butter, covering the entire surface. On the other slice of bread, spread honey. Put the two halves together and dig in!
 

When the Moon Hits the Sky Like a Big Pizza Pie…
…that’s called dinner! Pizza has got to be the most versatile meal; there are endless possibilities when it comes to this simple word and you can buy dough at nearly every grocery store. Sprinkle some flour on the counter and on the dough and flatten the dough by rolling it into a circle. For a white pizza, brush the dough with olive oil and crushed garlic, followed by mozzarella, ricotta and parmesan cheese topped with basil. For a traditional cheese pizza, top with any brand of red sauce and mozzarella cheese. I like to add some oregano and garlic salt for extra flavor. Place your creation in the oven heated at 450 degrees for about 18 minutes and devour. Best part about this tasty meal? The cold leftovers of course! Do I smell breakfast?
