Recipe of the Week: Spaghetti Squash

In the spirit of fall, this week’s recipe is spaghetti squash!!

 

It’s amazingly simple.

 

All you have to do is get a small to medium sized spaghetti squash, preheat the oven to 425 degrees Fahrenheit, cook for about 25 minutes, and you’re done!

Cut it in half before putting it in the oven.  You’ll know when it’s done by taking a fork to the middle and trying to rake across it, if the squash comes out in strings like spaghetti then it’s cooked all the way through. 

 

I prefer to top it with marinara sauce to complete it and have it with chicken, but you can pair it with whatever you like!! I also put a small amount of olive oil, salt, and pepper on each half before tossing them in the oven.  I love this dish because it’s a great transition into fall – and you feel like you’re eating pasta while getting in a veggie!!
