Recipe of the Week: Breakfast Burritos

    If you’re anything like me, then you wake up with just enough time to throw on some clothes and get to class in time.  Sometimes I don’t have any time to grab breakfast, and I always end up regretting it later.  This week I have been experimenting with breakfast burritos because they are quick to make, and you can bring them with you to eat on your way to class.  One that I found I really liked was very simple:

 

  • ½ baby avocado from Trader Joe’s (any avocado will do, I just happen to be partial to Trader Joe’s)

  • 2 eggs

  • 1 slice of sharp aged cheddar cheese, crumbled

  • 1 small flour tortilla

 

I put the small tortilla in the microwave for 30 seconds to soften it, while putting the eggs and cheese in a pan to scramble them together.  Once the tortilla was warmed, I put the ½ avocado down on the tortilla, followed by the eggs and cheese and there you have it, a breakfast burrito!
