Recipe of the Week: Avocado Toast with Eggs

This is my go to breakfast, it’s full of all the good fats, proteins, and carbs that I need to fuel me for my day!

 

My usual recipe is:

 

Whole wheat bread

Two eggs

One small avocado (I usually buy a bag of the teeny avocados from Trader Joe’s)

 

I toast my bread, and while it’s toasting I cook my eggs one at a time over-medium style.  

Once my toast is done, I mash half an avocado on each piece of toast, then sprinkle lemon pepper and Trader Joe’s “Everything But the Bagel” seasoning on top.  

Once the eggs are done, I top each piece of toast with an egg.

 

Voila! You have a delicious breakfast. I also usually pair this with fruit for a complete meal.
