With the weather around campus transitioning into spring, I love to eat a nice healthy salad for lunch. Here is my favorite go to spring salad:

-Mixed greens

-Cucumber

-Grape tomatoes

-Quinoa

-Hard boiled eggs

-Garbanzo beans

-Bell pepper

-Strawberry

Topped off with a nice balsamic vinaigrette

 

The eggs, garbanzo beans, and quinoa give the salad a boost of protein to keep you energized throughout your day.
