Greek Yogurt Muffins!

Back again for another food blog; this one is all about my love for Greek yogurt!

I love eating nutricious and delicious foods and Greek yogurt comes in handy for when those sweet tooth cravings attack. I’ve learned several different ways to use Greek yogurt for healthy desserts and breakfast go-tos and I want to share one with you. There are some mornings when all I want is one gigantic, chocolate-covered, sugar-filled muffin from Einstein’s and instead, I have these on hand to stop that craving in it’s tracks. Keep reading for the recipe!

What You Gotta Have:

2 cups of flour (sifted)

1 cup white sugar

1/2 teaspoon of salt

2 teaspoons of baking powder (NOT soda!)

2 eggs

1/3 cup vegetable oil

2/3 cup Greek yogurt (My favorite kind is Dannon’s Light and Fit Vanilla!)

1 cup chocolate chips (Yum!)

What You Gotta Do: 

Preheat your oven to 400 degrees Fahrenheit before you start and line your muffin tin with cupcake liners so it is ready to go.

Then, mix your floour, sugar, baking powder, and salt into a big mixing bowl. After that, in a separate mixing bowl, combine your wet ingredients like your eggs, vegetable oil, and the Greek yogurt. Whisk it up!

Once those two bowl mixtures are all mixed up, pour the flour mixture into the liquid mixture in the second bowl. Mix it all up and then add your yummy chocolate chips!

Lastly, fill your muffin tray with liners to about 3/4 the way for each and pop it in the oven for 20 minutes and then enjoy!
