Food Blog: Recipes To Ring In The Season

Fall is undeniably the best season for food; football, Thanksgiving and pumpkin flavored everything, what more could a girl ask for? Even if you’re not into tailgating or if you don’t like the pumpkin flavor, there are still plenty of fall treats to enjoy. So, here are some recipes to get you started!

 

Chicken Enchilada Dip

This recipe was passed to me from a family friend, and it is by far my favorite dip ever. It is perfect for tailgating or watching NFL football on the TV.

Ingredients:

2 cups shredded chicken

1 cup cream of chicken soup

1 cup shredded cheddar cheese

1 (5oz) can evaporated milk

½ cup chopped celery

1/3 cup finely chopped onion

1 (4oz) can chopped green chilies

1 package taco seasoning

 

Instructions:

1)   Combine all ingredients in a 2 quart dish.

2)   Microwave 4-5 minutes, stir.

3)   Microwave 3-4 minutes.

4)   Serve with chips or bread.

 

Snickers Caramel Apple Salad

This is definitely my kind of salad: Snickers, caramel and cool whip, all together! The apples make it healthy, right? Regardless of the nutrition facts, this salad is sure to solve a sweet tooth the Fall way. 

 

Ingredients:

6 regular size Snickers Candy Bars

6 apples

1 (5 oz) package Vanilla Instant Pudding dry, do not prepare

½ cup milk

1 (12 oz) tub cool whip

½ cup caramel ice cream topping

 

Instructions:

1) Whisk vanilla pudding packet, milk and cool whip together until well combined.

2) Chop up apples and Snickers.

3) Stir chopped apples and Snickers into pudding mixture.

4) Place in a large bowl and drizzle with caramel ice cream topping.

5) Chill for at least 1 hour before serving.

 

 

100 Calorie Pumpkin Spice Muffins

Okay, you can’t beat a 100-calorie muffin, and there are only three ingredients in it. Talk about easy and delicious. You might not want to share these treats!

 

Ingredients:

1 (15 oz) can of pure pumpkin

1 egg

1 box of spice cake mix

 

Instructions:

(1) Preheat oven to 325. Line muffin pan with muffin liners.

(2) Combine the three ingredients well and distribute into pan.

(3) Bake for 15 minutes.

 

No-Bake Peanut Butter Chocolate Pretzel Bars

I cannot rave about these enough! I made them for the first time recently and could not stop eating them. The best part was that I already had almost all of the ingredients, and if you like to bake, you probably do, too. Get ready for a new addiction because these will quickly become your favorite treat.

 

Ingredients:

Nonstick cooking spray

2 cups creamy peanut butter (divided)

3/4 cup (1 1/2 sticks) butter (softened)

2 cups powdered sugar (divided)

4 cups (½-inch pieces), broken small pretzel twists (divided)

2 cups Semi-Sweet Chocolate Chips (divided)

 

Instructions:

(1) Line a 13 x 9-inch baking pan with foil, leaving an overhang on two sides.

Lightly spray foil with nonstick cooking spray.

(2) Beat 1 ¼ cups peanut butter and butter in large mixing bowl until creamy.

(3) Gradually beat in 1 cup powdered sugar.

(4) Stir in remaining 1 cup powdered sugar, 3 cups pretzel pieces and ½ cup morsels.

(5) Press evenly into prepared baking pan. Smooth top with spatula.

(6) Microwave remaining 1 ½ cups morsels and 3/4 cup peanut butter in uncovered, microwave-safe bowl for 45 seconds; stir if necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted.

(7) Spread chocolate layer evenly over powdered sugar mixture. Sprinkle with the remaining pretzel pieces, pressing down lightly.

(8)  Refrigerate for at least 3 hours or until firm. Lift from pan; peel off foil. Cut into pieces. Store in covered container in refrigerator.
