Food Blog: Chocolate Turtle Cookies & Chocolate Chips Salted Carmel Cookies

I made these cookies during Christmas time with my Mom and we loved them! Well, we love anything involving chocolate and caramel so it was kind of a given. They did take a while to make because of all the different steps, but they were worth it.

Chocolate Turtle Cookies

Ingredients:

(Makes about 2 ½ dozen)

·       1 cup all-purpose flour

·       1/3 cup cocoa powder

·       1/4 teaspoon salt

·       8 tablespoons (1 stick) unsalted butter, softened

·       2/3 cup sugar

·       1 large egg, separated, plus 1 egg white

·       2 tablespoons milk

·       1 teaspoon vanilla extract

·       1 1/4 cups pecans, chopped fine

·       14 soft caramel candies

·       3 tablespoons heavy cream

Directions:

1.     Combine flour, cocoa, and salt in bowl. With electric mixer, beat butter and sugar until light and fluffy (for about 2 minutes.) Add egg yolk, milk, and vanilla and mix until incorporated. Reduce speed to low and add flour mixture until just combined. Wrap dough in plastic wrap and refrigerate until firm (for about 1 hour.)

2.     Preheat the oven to 350 degrees Fahrenheit, with the oven rack on the middle shelf. Line 2 baking sheets with parchment paper. Whisk egg whites in bowl until frothy. Place pecans in another bowl. Roll dough into 1-inch balls, dip in egg whites, and then roll in pecans. Place balls 2 inches apart on prepared baking sheets. Make quarter sized indentations in center of each ball. Bake for about 12 minutes, switching and rotating sheets halfway through baking.

3.     Microwave caramels and cream in bowl, stirring occasionally, until smooth, for about 1 to 2 minutes. Once cookies are removed from oven, gently re-press existing indentations. Fill each with 1/2 teaspoon caramel mixture. Cool 10 minutes, then transfer to wire rack to cool completely.

4.     Optional: Once the cookies are cooled, melt chocolate and drizzle it over the cookies.

Chocolate Chip Salted Carmel Cookies

Ingredients: (Makes about 4 dozen)

1 cup unsalted butter

1 cup brown sugar

1 cup white sugar

1 egg

1 tsp vanilla

1 1/2 cups all-purpose flour

1 tsp baking soda 

1 1/2 tsp salt

2tsp cinnamon

1 1/2 cups chocolate chips 

Kraft Caramel Candies

Sea Salt

Directions:

–  Preheat oven to 350 degrees Fahrenheit and line baking sheet with parchment paper.

–  Cream sugars and butter in the stand of a mixing bowl until light and fluffy. Add egg and vanilla and mix until evenly combined.

–  Add flour, baking soda, salt and cinnamon to mixing bowl and combine.

–  Add chocolate chips.

–  Drop cookies six to a sheet. (DO NOT put more than six on a sheet. These cookies spread really thin so they will clump together if you put more than six!) Cut up caramel squares into halves or fourths, whichever you prefer. Stick them into the balls of cookie dough.

–  Bake for 8-12 minutes or until golden brown, rotating halfway through.

–  As soon as the cookies come out of the oven, sprinkle them with sea salt.

 

You can use virtually any chocolate chip cookie recipe you want. To make it even easier, you could simply buy store bought cookie dough and added caramel and sea salt they would still taste awesome!
