As summer comes closer and the sun shines brighter, more and more HC *legal* students are heading outside for a good time. As you party away in your sun dress you want to be sipping on something yummy and refreshing. So, here are some recipes for that beautiful spring day.
1. Raspberry Sparkler:
Ingredients:
- 1 lemon
- 1 lime
- 1 pint fresh raspberries
- 2 tablespoons honey
- Handful of fresh mint leaves
- 4 ounces of gin
- 4 cups of vinho verde
2. Peach Gin Fizz:
For the Simple Syrup:
- 2 white peaches, sliced
- 1 cup of water
- 1 cup of sugar
For the Cocktail:
- 3 Tbsp. of peach simple syrup
- 1 oz. of gin
- a pinch of superfine sugar
- club soda
- peach slices & blueberries for garnish
Directions:
Place peaches, water, and sugar in a pot over medium heat. Bring to a boil and let cook for 5 minutes until peaches are macerated. Reduce to low and let simmer until liquid is reduced by half (12 minutes or so). Remove from heat and let cool. Once cool, strain through a fine mesh sieve. (Note: reserve the peaches if you’d like. They’re like candy at this point. I may or may not have put them on vanilla ice cream when they were still warm. Good life decision.) Then, to assemble- pour simple syrup into the bottom of a glass, add gin and superfine sugar and mix, and top with club soda and garnish with a floating peach slice and a few blueberries.
3. Vodka Spiked Blueberry Lemonade:
Ingredients:
- Vodka Spiked Blueberry Lemonade.
- 1 cup of sugar
- 1 cup of lemon juice (I used bottled)
- 6 cups of water
- 1/2 cup of fresh or frozen blueberries
4. Grapefruit Tequila Slammer:
Ingredients:
- 4 ounces of fresh grapefruit juice
- 2 ounces of silver tequila
- 2 ounces of lemon lime soda
- garnish with additional grapefruit
