Three Delicious Dinner Recipes on a Budget

Pasta alla puttanesca

Ingredients:

1-2 cloves of garlic

3 tablespoons of olive oil

1 whole chili

500 grams of tomatoes

1 small jar of olives

400 grams of pasta 

Salt, sugar, black pepper and spices of your choice

Preparation:

Remove the seeds from the chili and chop if finely. Chop up the garlic, olives and tomatoes. Heat up the olive oil on medium heat and add the chili, garlic and olives. After a couple of minutes, add the tomatoes and spices of your choice. Let the sauce boil for 15 minutes on low heat. While the sauce boils, prepare your pasta. After the pasta is cooked al dente, add the sauce to the pot of pasta. If desired, you can add some parmesan cheese or basil to garnish the dish. 

Tortilla española 

Ingredients:

3 potatoes

4 eggs

1 yellow onion

1 red bell pepper

4 tablespoons of olive oil

Salt and pepper

Preparation:

Start off by peeling and chopping up the onion and bell pepper. Peel the potatoes and cut them up into thin slices. Heat up the olive oil in a pan, and add the potato slices, onion and bell pepper. Cook the vegetables on medium heat for 20 minutes. After the potatoes are almost cooked, add the eggs and spices. Let the mixture cook under a lid for about 8 minutes, until the eggs are fully cooked. This dish can be served both hot and cold. 

Classic chicken noodle soup

Ingredients:

200 grams of noodles

1 chili

2 cloves of garlic

1 litre of vegetable broth

3 tablespoons of sesame oil 

500 grams of assorted wok vegetables

50 grams of ginger

300 grams of chicken 

Preparation:

Peel the garlic and ginger and chop them up. Chop up the chili and wok vegetables. Heat up the sesame oil in a wok pan, and add in all the vegetables. Cook the vegetables for about five minutes, and then add the vegetable broth. After adding the broth, add in the noodles. While the noodles are cooking, cook the chicken in a hot pan. When the chicken is cooked, slice it up into smaller pieces, and add it to the wok pan. Mix it all up, and season to taste.
