After this past spooky season, and with crazy amounts of school assignments piling up, I definitely needed to bring out my beloved snack recipes. I thought I would share five of my favorite quick and easy vegan snacks that will hopefully help counter that post trick-or-treat cheat day and college stress!

DIY Spicy popcorn

To start off this list, popcorn is a great vegan snack to eat during class or with friends during a fun movie night after studying. If you want to vamp up your popcorn experience, try this easy recipe to add some spice to your snack:

Ingredients

6 cups of popcorn (freshly popped buttered)

1 tsp paprika

½ tsp cayenne pepper

½ tsp cracked black pepper

Salt (to taste)

Steps

  1. In a large container with a cover (you can use a pot with a lid or a Tupperware-style container), combine the hot popcorn with the spices. Cover and shake until fully coated.
  2. Add any salt to taste and serve!

savory Chickpeas

I don’t usually gravitate towards chickpeas as my first snack option, but ever since trying this recipe, I will never take chickpeas for granted. I recommend making these ‘popcorn’ chickpea snacks from scratch, but the store-bought HIPPEAS: Chickpea puffs are definitely a good alternative for a quick ready-to-go snack! Here’s the recipe: 

Ingredients

1 can of chickpeas

1-2 tbsp of spices or herbs (paprika, turmeric, curry, dried basil, etc.)

Steps

  1. Drain one can of chickpeas.
  2. Place on a parchment-lined baking sheet.
  3. Cover the chickpeas in your choice of spices and/or herbs.
  4. Bake at 400F for 30 minutes or until the soft chickpeas harden. No need to add oil.
Oreo Truffles

Fun fact: Oreos are vegan and one of my must-have snacks in my pantry! If you’ve ever watched the movie Parent Trap with Lindsay Lohan, you already know that since watching it, I love eating Oreos with a bit of vegan peanut butter. But if you want a fun twist on a classic Oreo cookie, try this Oreo Truffle recipe that takes only three simple ingredients:

Overnight Oats

This is an easy recipe to follow when you’re on the go for a quick and ready-made breakfast or snack in between classes. After a long night of studying or going out to treat yourself, overnight oats will have your back. Try this easy recipe the night before and wake up to a ready-made vegan treat to eat at anytime of the day: 

Ingredients

2 cups Old-fashioned rolled oats

2 cups of plant milk (e.g. soy, almond, oat, etc.) or water 

1-2 tbsp of chia seeds

Optional: add in any spices (e.g. cinnamon, cardamom, cocoa powder)

Steps

  1. Mix all of the ingredients together in a mason jar/container. 
  2. Place into the refrigerator for a few hours or overnight until a thick mixture forms as the chia seeds expand.
  3. Top it with bananas, berries, nut butter, or any other desired toppings. Tip: you can also add nut butter in the beginning for a thicker, more indulgent vegan snack.
Granola Bars

I’ve heard mixed opinions about granola in my family, but I have a soft spot for anything granola related in my snack tier. A few of my store-bought favorites include: Bear Naked’s Granola Bites from Walmart, MadeGood’s Granola Bites or Bars, and Organic Mixed Berry Granola Bites from Trader Joe’s. These are a must-try in my book and a great snack to add to your grocery list! But here’s a recipe to try if you want to make it from scratch:
