If you’re like us and can’t get enough of fall and food you might want to try out our recipe for pumpkin pancakes! Simple, easy to make and dangerously delicious, they are the perfect breakfast (or dinner) treat. And, if you’re sweet tooth is craving a little extra, you might want to try adding a scoop of vanilla ice cream and some maple syrup. Mmmmmm!

Ingredients
2 cups all-purpose flour
3 tablespoons packed brown sugar
1 tablespoon baking powder
½ table spoon salt 1 ¾ cups milk
3 eggs, lightly beaten
¾ cup canned pumpkin
¼ cup cooking oil

Directions
1. In a large bowl combine flour and other dry ingredients. In a second bowl combine eggs and remaining ingredients. Stir milk mixture into flour mixture until slightly lumpy.
2. Heat a lightly greased griddle or heavy skillet over medium heat. For each pancake pour ¼ cup batter onto griddle. Cook until golden; flip when tops are bubbly and edges slightly dry (1 to 2 minutes per side). Makes about 16 pancakes.

Pumpkin Smoothie

A blender opens a new realm of dorm food possibilities, and this pumpkin smoothie is definitely one to add to the list. While a smoothie may not be the first treat to pop in your mind for fall, it’s just so easy to prepare it’s hard to resist! Simply toss the ingredients into a blender and, boom; in two minutes you have a rich and flavorful slurp of autumn!

1/2 cup canned pumpkin
3/4 cup milk or vanilla yogurt
1/4 tsp. cinnamon
1/8 tsp. nutmeg
2 tsp. brown sugar
4 ice cubes

(Swap the milk or yogurt for soy or almond products if you prefer vegan dishes.)
