8 Tacos That Will Make You Want to Salsa

This article is written by a student writer from the Her Campus at GCU chapter.

National Taco Day is upon us! Tacos have quickly turned into one of the most sought after foods. Tailgates, family get-togethers, and ordinary Tuesdays are all reasons people flock to local taquerias or to the grocery store. Whether it is from the kitchen or a restaurant, tacos offer a satisfying meal no matter what the setting may be. In honor of the mouth-watering, plate-licking, and happy-dancing food, here are eight tacos that are sure to get your taste buds dancing!

Make it yourself Tacos:

1.  Salsa Verde Honey Lime Chicken Tacos

These tacos are truly bursting with flavor. The chicken sits in the crockpot in a bath of heavenly sauce, making it not only delicious, but easy as well! The honey and the lime paired together give the chicken a tangy and sweet flavor. You can top these tacos any way you like. With some fresh cotija cheese and avocado you can have yourself some tasty tacos with minimal work.

2. Chipotle Shredded Beef Tacos with Avocado Crema

Slow cookers make achieving scrumptiousness so much easier, which is why this recipe to die for. The melt-in-your-mouth meat is wonderfully flavored and gives the tacos a smoky taste. The Greek salsa and avocado crema that tops these tacos off are so good you’ll want to eat them by themselves!

3. Coconut Shrimp Taco with Mango Salsa

While summer may be coming to a close, these tacos will take you back to your tropical vacation. The coconut takes these tacos one step further than ordinary shrimp tacos. Once topped with the mango salsa and the squeeze of a fresh lime, it is a combination that will leave you craving seconds!

4. Homemade Choco-Tacos!

Who says tacos can’t be dessert?! With these homemade choco-tacos, you can treat yourself and still get all the happy, comfort-food feelings of an actual taco (if not more, because ICE CREAM!). You can substitute the vanilla ice cream for any flavor of your choice to spice things up a bit. These are a perfect summer treat and a great way to add some variation to the traditional taco!

Don’t feel like cooking? Go out!

5. Two Hippies Beach House

Two Hippies Beach House is a short drive from GCU’s campus and has some amazing tacos! Amongst their many options, there are shrimp and chicken tacos which are both to-die-for! Tacos are served with a lime on the side to add an extra tang, even though they speak for themselves! At Two Hippies, you can pair your tacos with their famous blended lemonade to complete your meal and your experience!

6. Joyride Taco House

Joyride Taco House has a few locations throughout the valley, so you can find one close to you! The funky atmosphere and the fun servers make Joyride a fun place to hang out with a drink in your hand and some delicious grub! Happy Hour from Joyride includes two dollar tacos and five dollar margaritas and pitchers of beer. Their fish tacos are highly raved about for their crunch and burst of flavor! Also, for vegetarian eaters, you can ask them to cut the corn off the cob on their street corn and turn it into an amazing taco!

7. Taqueria Los Yaquis

This taqueria is located outside of Charlie’s club. While the outside of this place might be a little rough on the eyes, the food that is served out the small window is worth it! The chicken and carne asada tacos are full of flavor. The tacos here are also on the cheap side for a college-friendly budget. After a night of dancing, these tacos hit the spot!

8. United Lunchadores

United Lunchadores has both a food truck and a regular shop. Their variations on Mexican food leave people in love with their food. Their business is newly expanded and they are coming up with new creations and spins on tacos and quesadillas. On their menu, you can choose from 4 different kinds of meats to fill your taco. The carnitas taco topped with the homemade (and heavenly) salsa has a name for itself because of the popularity. Find the truck on the go or stop in at the taco parlor to partake in these delicious tacos!

No matter what your food preferences are, tacos can be filled with anything you want. The combinations are endless! At home, you can make your own tortillas, or simply heat up corn tortillas on the stove and make your own amazing tacos. You can also make a batch of The Best Horchata if you are feeling truly ambitious If the kitchen is not calling your name, we live in the heart of taco central! Right out the gates of GCU are tons of taco shops waiting to be explored! Since it is National Taco Day, put on some good tunes and start your journey to making or finding the taco that makes you want to salsa!
