College Cooking: Easy Beef and Broccoli Stir-Fry Recipe

Leaving for college is no easy feat; you find yourself missing your dog, your bed, your friends and let’s be honest, your mom’s home cooking! There are just some nights that your PB and J’s don’t cut it. So how about we ditch the instant cup noodles for this easy beef and broccoli stir-fry. Food that’s almost as good as your mom’s.

TOTAL TIME: 15 minutes

Prep: 5 minutes

Cook: 10 minutes

Serves: 2

Ingredients:

½ lb of boneless round steak or Milanesa cut steak

2 tablespoons of flour

2 tablespoons of water

½ teaspoon of garlic powder

2 cups of broccoli florets

1 onion

1 cup of soy sauce

1 table spoon of honey

Rice

Vegetable oil

Minced garlic

Alternatives:

Some people prefer to add ground ginger or nutmeg instead of honey.

Directions:

In a bowl, combine 2 tablespoons of flour, 2 tablespoons of water and ½ teaspoon of garlic powder.

Add mixture to the steak, in order to season. Feel free to add more seasoning, depending on your taste. If you are looking for a sweet and sour taste, add 1 table spoon of honey, highly recommended*

In a large skillet, add vegetable oil and warm over medium heat. Then, add onions and minced garlic. I prefer to cut the onions into wedges for this recipe. Cook until translucent.

Then add the broccoli and stir-fry for 4-5 minutes.

Add the beef to the pan.

Combine soy sauce. I like to buy reduced sodium soy sauce to avoid my food being too salty. You can still use regular soy sauce, but if you find that your food may be too salty, feel free to reduce with a little bit of water.

Cook and stir for approximately 2-3 minutes

Serve over rice.

Tip: You can use 1lb of steak and use it to meal prep.
