5 Cocktails to Make This Spring Break

Everyone’s favorite part of spring semester is coming up soon and no, I am not talking about midterms. I’m talking about spring break, of course! Whether you are going away on vacation or staying home, here’s a list of five delicious cocktails that pair perfectly with a day of lounging by the pool and not worrying about tests or homework.

1. Strawberry Margaritas

A spin on a classic cocktail, these strawberry margaritas are super easy to make and are the perfect blend of frosty and fruity. All you need is a blender or a Nutribullet and you are all set to impress your friends. All you need to do is put all the ingredients in and blend away. I also like to put sugar on the rim of my glass to give it a restaurant-esque look.

  • Ingredients:
  •  6 oz. tequila
  • 2 oz. triple sec
  • 15 oz. frozen strawberries in syrup, slightly defrosted
  • 4 oz. frozen limeade concentrate
  • 4 cups ice
  • Sugar
  • Lime wedge

2. Skinny Dragonberry Rum Twist

This a great looking drink that is not only light and refreshing but light on the calories as well. Although it looks complicated, it’s actually super simple to make. Just put all the ingredients in a shaker and serve over ice. This cocktail is guaranteed to look great on your Instagram feed.

  • Ingredients:
  • 6 oz. Fresca (original citrus flavor)
  • 1.5 oz. Bacardi DragonBerry Rum
  • 8 Raspberries, roughly chopped
  •  juice of 1/2 lemon

3. Electric Lemonade

Okay, how could you pass up on this drink? With its shocking blue color, it was made to be drunken by the beach or at an impromptu pool party. Again, a simple recipe; all you need to do is fill your shaker with ice, dump your ingredients in and shake well. The blue color will float to the top by itself, making it a beautiful and yummy treat.

  • Ingredients:
  • 1 oz. (30 ml) vodka
  • 1 oz. Blue Curacao liqueur
  • 2 oz. (60 ml) 7UP
  • 2 oz. (60 ml) sweet and sour mix (mix 8 oz. of lemon juice with 2 tablespoons of sugar)

4. Disneyland Dole Whips

Are you as big of Disney fan as I am? If you are, then you know about the parks signature treat, Dole Whip. While this recipe is for a mocktail, it is still a fun take on the classic dessert so that you can take the fun of Disney with you wherever you decide to spend your spring break. Just plop all the ingredients into a blender and voila!

  • 1/3 bag of frozen Dole Pineapple Chunks
  • 1 1/3 cups of vanilla ice cream
  • 1/3 teaspoon lime juice
  • 1/3 teaspoon lemon juice
  • 4 oz. pineapple juice

5. Strawberry Pineapple Mojito

I don’t know about all of you, but I am a sucker for a good cocktail. Another perfect poolside cocktail that incorporates tropical fruit to this classic South Beach drink. While this one might be a bit more complicated, it is seriously worth it. For each cocktail, muddle four lime wedges, mint leaves and two strawberries and one tablespoon of sugar in a shaker so it’s lightly crushed. Then stir in the pineapple juice, rum and club soda and serve over ice. Also, feel free to substitute your favorite fruit into the recipe as well.

  • Ingredients:
  • 4 limes, cut into wedges
  • 8 strawberries
  • 1 bunch mint, tough stems removed
  • 4 tablespoons sugar
  • 6 ounces pineapple juice
  • 6 ounces light rum
  • 2 cups club soda
