3 Easy Trader Joe’s Meals for College Students

Trader Joe’s, aka the best place on earth, truly helps us out on the days that our schedules are crazy and there isn’t enough time to get everything done. Let’s be real, the most important part of the day besides going to class is eating a meal.

 

Trader Joe’s has an amazing selection of healthy ingredients that can be used to make some seriously delicious and quick meals. Here are 3 of our faves:  

 

  1. Trader Joe’s Butternut Squash Crust is the perfect base for a fall harvest inspired pizza.

If you’re looking to cut back on some carbs, but still want the comforts of our beloved fall season, this recipe is for you! For a true ode to fall, top the crust with some creamy mashed sweet potatoes, sautéed kale and onions, and sprinkle some parmesan on top!

 

  1. Swapping carbs for cauliflower has been a major food ~craze~ lately! Trader Joe’s hopped on the bandwagon by giving all food-lovers a healthy alternative to their favorite pasta dish. Cauliflower gnocchi is perfect for the gal-on-the-go who just needs a quick fix. Throw some gnocchi in the pot, mix it with your favorite pasta sauce, and voila, you have a delicious meal!

 

  1. For all those college gals that don’t have the time or energy to spend at least an hour prepping your dinner, grab the Mediterranean Salad Kit from your local TJ’s! Not only is this salad visually appealing with the deep purple of the radicchio, but the seasoned flatbread crisps and roasted chickpeas give it an extra crunch!
