5 Mug Cakes to Satisfy your Sweet Tooth

We all know University can be stressful and sometimes you can’t help but desperately crave cake – a lot of it! Unfortunately as students, we don’t exactly have the financial means or required baking tools to fulfill our cake desires… However, Her Campus Exeter has the solution – mug cakes! For time-deprived students, mug cakes are quick and simple ways to satisfy your cravings in just a couple of minutes.

Nutella Brownie in a Mug

1/4 cup + 1 tbsp Nutella

2 tbsp whisked egg

2 tbsp all purpose flour

Combine all ingredients into an oversized microwave-safe mug. Mix with a whisk until batter is smooth. Batter will be quite thick.

Microwave for 1 minute. Let brownie cool and set for about 15-30 minutes before eating.

This recipe results in a super rich, fudgy, nutella-y brownie! It can be a little too rich so be warned, eat slowly! 

 

Chocolate Peanut Butter Mug Cake

 2 tablespoons butter

2 tablespoons peanut butter

1/2 teaspoon vanilla

1 egg

2 tablespoons sugar

2 tablespoons flour

3 tablespoons cocoa powder

1/8 teaspoon salt

1/8 teaspoon baking powder

3 tablespoons chocolate chips

Melt the butter in a small dish. Add the peanut butter and mix well.

In the mug, mix together the vanilla, egg, and sugar until well combined.

Combine the flour, cocoa, salt, and baking powder and add to the mug. Pour in the peanut butter/butter mixture and mix well. Stir in the chocolate chips.

Put in the microwave for 1-2 minutes or until desired doneness is reached (all microwaves are different so you might have to experiment a little).

Top with peanut butter pie mousse and hot fudge. 

Peanut Butter Pie Mousse

1 tablespoon softened cream cheese

1 tablespoon peanut butter

1/2 teaspoon vanilla

2 tablespoons whipped cream or cool whip

1 tablespoon powdered sugar

 

Mix together the cream cheese, peanut butter, and vanilla. Fold in the whipped cream. Sift in the powdered sugar and fold that in too, trying not to over stir. 

If you don’t have the ingredients for the peanut butter pie mousse, try whipped cream, vanilla ice cream, or chocolate frosting as a topping.

Dark Chocolate Mug Cake

3 tbsp butter, melted (or flavourless oil)

1 egg (lightly beaten)

3 tbsp milk

4 tbsp plain flour

3 tbsp caster sugar

3 tbsp cocoa powder

½ tsp baking powder

Pinch of salt

 

Put butter into mug and microwave for 10 seconds to melt.

Add in egg and milk and lightly beat with a fork until combined.

Add dry ingredients into mug and beat with your fork until mixed through.

Place mug in the microwave and cook for 1 minute on medium heat.

The pudding should be risen and still slightly gooey in the middle. If still too undercooked for your liking, cook it further in 10 second bursts in the microwave.

Strawberry Mug Cake

 

5 1/2 tablespoons all-purpose flour

4 tablespoons sugar

1/8 teaspoon baking powder

1 egg

3 tablespoons milk

3 tablespoons oil

2 strawberries, each cut into 4-5 pieces

 

Combine all ingredients except strawberries into oversized mug. Stir with a small whisk or fork until batter is smooth. Carefully drop strawberry pieces on top.

Microwave for 1 1/2 minutes. If cake is not done, microwave for an additional 30 seconds. Serve while warm.

Try this for the perfect alternative if you’re not a fan of chocolate!

Banana Mug Cake

1 tbsp butter, melted (or flavourless oil)

1 egg (lightly beaten)

1 tbsp milk

1 ripe banana (mashed)

3 tbsp plain flour

3 tbsp brown sugar

½ tsp baking powder

1 scoop of coffee ice cream to serve

 

Put butter into mug and microwave for 10 seconds to melt.

Add in egg and milk and lightly beat with a fork until combined.

Add in egg and milk and lightly beat with a fork until combined.

Add mashed banana into the mug and continue stirring with you fork until mixed through.

Finally, add dry ingredients into the mug and beat with your fork until combined.

Place mug in the microwave and cook for 1 minute on medium heat.

The pudding should be risen and still slightly gooey in the middle. 

Serve with a generous scoop of coffee ice cream.

If you’re a fan of banana this will definitely satisfy your taste buds. For some variety, try adding cinnamon or serving with peanut butter ice cream instead of coffee for a nutty treat.
