Favorite Recipes That I Have Made in Quarantine

If we’re all going to be stuck inside, we might as well eat some good food! Here are my top three favorite recipes that I have made while in quarantine. Bon appetit!

Chocolate Chip Cookies 

Ingredients: 

2 ¼ cups flour

1 tsp. baking soda   

1 tsp. salt

1 cup butter or margarine, softened 

¾ cup sugar

¾ cup packed brown sugar

1 tsp. vanilla extract

2 large eggs

2 cups semi-sweet morsels

1 cup chopped nuts (optional) 

 

Directions:

Combine flour, baking soda and salt in a small bowl.

Beat butter, sugar, brown sugar and vanilla extract in a large mixer bowl until creamy. Add eggs one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. 

Drop by rounded tablespoon onto ungreased baking sheets.

Bake at 375° for 9 to 11 minutes or until golden brown.

 

Yield: 5 dozen cookies

 

 

Apple Crisp 

Ingredients: 

4 cups sliced tart apples (about 4 medium)

⅔ to ¾ cup packed brown sugar

½ cup all-purpose flour 

½ cup oats

¾ tsp. ground cinnamon 

¾ tsp. ground nutmeg 

⅓ cup margarine or butter, softened 

 

Directions:

Heat oven to 375°. Arrange apples in a greased square pan, 8x8x2 inches. Mix remaining ingredients; sprinkle over apples. 

Bake until topping is golden brown and apples are tender, about 30 minutes. Serve warm and, if desired, with cream or ice cream.

 

Yield: 6 servings

 

Macaroni and Cheese

Ingredients: 

2 cups Prince Elbow Macaroni 

4 Tab. flour

1 tsp. salt

1 lb. cheddar cheese

4 Tab. butter

3 cups milk

¼ tsp. pepper

1 cup buttered crumbs 

 

Directions:

Place cooked macaroni in a buttered casserole.

Melt butter in double boiler.

Add flour, salt, pepper and blend.

Add milk slowly until sauce thickens. 

Cut cheese into cubes and add to sauce.

Stir constantly until cheese melts.

Pour over macaroni.

Top with bread crumbs. 

Then bake at 350° for 30 minutes.
