Tips For A Vegetarian Thanksgiving

Who doesn’t love Thanksgiving food?  Vegetarians.  

Ever since joining the meat-free clique three years ago, I’ve left Thanksgiving meals either starved or nauseated from eating too many vegetables. Requesting a different dish seems irritating.  And sitting at the table while everyone drools over the turkey is like when my non-Jewish friends countdown to Christmas.  How can not I feel left out of the holiday I’m celebrating? This year, things need to change. 

Whether you’re eating your Thanksgiving meal from the comfort of your kitchen or you’re at your grandma’s house, these recipes are simple additions that will pleae turkey lovers as well.  As an added plus, these EatingWell recipes are all figure friendly, so you can enjoy that slice of pumpkin pie a little more.

 

1.  Squash Leek Lasagna

Someone should forward this recipe to the DUC.

2.  Roasted Vegetable Gelatte

Mom, if you’re reading this, please add this to the Thanksgiving menu.

3.  Vegetable Cheddar Crust Tart

This could possibly put the Farmer’s Market’s tart lady to shame.

4.  Broccoli Cheese Souffle

This beautiful portion controlled souffle will definitely rack up the Instagram likes.
