Everyone loves avocado, it’s a fact. Many don’t know all of the recipes you can incorporate avocado in, though. Check out these easy avocado recipes and expand your avocado horizon!

Guacamole

Everyone loves guacamole – you can eat it with everything and anything. Mastering a perfect guacamole recipe can be tricky though. Follow this for an always-perfect batch. Mash the avocados with the lemon juice in the bowl. Stir in the other ingredients once the avocado is in chunks.

Ingredients

·      4 ripe, Fresh Hass Avocados, seeded, peeled, cut in chunks


·      1 Tbsp. lemon juice


·      1/2 small sweet white onion, minced


·      1 ripe Roma tomato, seeded and diced


·      Salt and pepper, to taste



Meal in ½ Avocado

Check out this salad within the avocado! Cut your avocado in half, fill with black beans and salsa and these other ingredients, and eat right out of the avocado shell!

Ingredients

·      4 Tbsp. black beans, rinsed and drained

·      2 Tbsp. corn

·      2 Tbsp. shredded carrots

·      2 Tbsp. prepared chunky salsa

·      A few chunks of onion

·      A few drops of hot pepper sauce

·      ½ fresh avocado

Raspberry Avocado Salad

This salad is tart and sweet, bringing together different flavors that go together perfectly. For a dressing, mix together some extra virgin olive oil, a little bit of honey Dijon mustard. The dressing will definitely bring out the taste!

Ingredients

·      1/2 fresh avocado

·      Spinach

·      ¼ orange, finely chopped

·      1 Tbsp. walnuts, chopped

·      3 Tbsp. raspberries

·      Pepper for taste


Vegetable and Avocado Salad

This salad is great in the fall. In a large skillet, head oil over a medium heat. Add garlic and thyme and sauté for about three minutes. When ready, add in the zucchini and bell pepper. Stir and cook the vegetables for two minutes at a medium heat, and then lower the heat, cooking for another two minutes. Then, combine lemon juice with avocado in a bowl and slowly add that to the skillet, cooking for another two minutes. The warmth of the veggies and cooked avocado will make you want to snuggle up and watch a movie.

Ingredients

·      Olive oil

·      ½ tsp. finely chopped garlic

·      ¼ Tbsp. fresh thyme leaves

·      ¾ zucchini chopped into small bite-size pieces

·      ¼ red bell pepper chopped into small bite-size pieces

·      1 tsp. lemon juice

·      1/3 fresh avocado cut into chunks

Avocado Chocolate Pudding

Chocolate pudding that could be healthy? Who knew! Technically, this recipe is for four-servings, but let’s be realistic, you’re going to want it all for yourself.  In a blender, blend the avocados, cocoa powder, brown sugar, coconut milk, vanilla extract and cinnamon until smooth. Put the pudding in the refrigerator until it has chilled, which should take about 30 minutes.

Ingredients

·      2 large avocado’s cut into chunks

·      ½ cup unsweetened cocoa powder

·      ½ cup brown sugar

·      1/3 cup coconut milk

·      2 tsp. vanilla extract

·      1 pinch ground cinnamon 


If these recipes don’t make you want to run out and get some avocados right now, I don’t know what will! All of these recipes are incredibly easy to make and can be made in a dorm room. Now, time to eat some avocado!
