I’ve always enjoyed cooking and baking and have found that I’ve been doing so more often now that I have a full kitchen in my apartment at school. My roommate is a great cook, and lately we’ve been trying out recipes together. The other night, we invited some friends over and made this baked ziti that everyone absolutely loved. I know we may not all be confident in our cooking abilities, but how hard is pasta, right? This is just the next step to boiling some water and throwing pasta in. This recipe calls for just a few ingredients, and makes a big tray enough to feed 10-12 people.  This is a quick, easy and fun recipe that is delicious and bound to impress your friends and family.

2 lb. rigatoni or ziti (try whole wheat for a healthier alternative)
1 jar marinara sauce
1 lb. container of whole milk ricotta cheese (Try part-skim for a healthier alternative)
2 bags of shredded whole milk mozzarella cheese (Try part-skim for a healthier alternative)
2 eggs

  1. Heat about half of the pasta sauce
  2. Boil 1 ½ -2 pounds of pasta
  3. Pour 1 lb. container of ricotta into a mixing bowl
  4. Crack 2 eggs into the same mixing bowl
  5. Stir eggs and ricotta
  6. When sauce is hot, spoon into the mixing bowl with ricotta and eggs and mix (Add sauce until cheese and egg mix is light pink)
  7. Drain pasta and pour into large tin pan or baking pan
  8. Add ricotta/egg/sauce mix to pasta in pan. Fold evenly throughout the pasta
  9. Add more sauce to the pan and mix in
  10. Pour a top layer of sauce
  11. Cover entire pan in layer of mozzarella
  12. Cover with tin foil and bake at 375 for about 20 minutes
  13. Uncover and bake for another 5-10 minutes, or until cheese is melted

Born and raised at the real Jersey Shore, she loves the beach, traveling, writing, running, and shopping. She recently studied abroad in Costa Rica for January Term, and hopes to go abroad for a semester in the fall of 2011. She hopes to move to Manhattan after she graduates and work for a women's magazine. Avery is excited to have the chance to bring Her Campus to Elon University.
