Recipes for any Occasion Featuring your Instant Pot

If you haven’t discovered how magical an Instant Pot is, allow me to enlighten you. My roommate and I got one last year for Christmas and use it at least 3 days out of the week. The Instant Pot is essentially an electric pressure cooker that enables you to cook anything from poultry, soup, rice, veggies, potatoes, and even deserts. The Instant Pot is easy to clean up and makes for easy and fast meals. Considering it only utilizes one pot to cook everything, having one is a huge bonus when you have little space and little time. Over the last year, I have tried numerous recipes online and am here to share some of my favorite easy dishes with you! 

One-Pot Chicken and Potatoes

This is a recipe I use constantly and that you can find different variations of online. It’s pretty basic and you can customize it to your liking, playing with different seasonings and ingredients. I prefer to use chicken thighs in this recipe as opposed to chicken breasts because the thighs when cooked in an Instant Pot are tender, juicy and absolutely delicious.

Broccoli Cheddar Soup

Broccoli cheddar soup is by far my favorite light dinner option. I have made this recipe along with a tomato basil soup and it is one of the easiest and quickest dishes to make in an Instant Pot. While trying this recipe I added half a cup more cheese, half the amount of onion, and almost triple the amount of salt and pepper. I have found that when cooking soup from a recipe, I often need to add more seasoning then what the recipe calls for giving it that extra kick! I pair this soup with a loaf of toasted French bread for the perfect, light, and easy dinner!

Spinach and Artichoke Dip

Yes, that’s right, you can make spinach and artichoke dip in the Instant pot. This recipe I found is the perfect party pleaser. I recommend finding healthier alternatives to some of the main ingredients in this recipe such as light mayonnaise, or reduced-fat cream cheese considering how heavy it is, but either way, it will be delicious. I pair this recipe with a toasted French baguette or pita bread.

Barbacoa Beef Tacos

I am an absolute taco fanatic. Anything I can make into a taco, enchilada or a burrito I will most likely do it. That’s why this recipe is so perfect. While cooking the sauce and beef in the Instant Pot, it is completely up to you on how you use this recipe. I paired this recipe with corn tortillas, diced avocado, shredded lettuce, a small amount of cilantro, and sour cream. These tacos are always a hit and the barbacoa pretty much melts in your mouth!
