If you know the movie The Bucket List starring Morgan Freeman and Jack Nicholson, you know that it has probably inspired many to create a bucket list. A bucket list is a list of things you want to accomplish before you “kick the bucket.” Here are a few things that I want to accomplish in my life.

  • Travel to Italy to Eat all the Pasta – I am a huge Italian food lover, and nothing would be better than traveling to Italy and eating all the authentic food and immersing myself in the culture. 
  • Own a Beach House – The beach is my happy place every summer when I get to escape to the coast here in Washington. To own a house there would be a sandy dream.

  • Leave a Legacy – I’ve always wondered in life if I would do great things and they would be talked about when my time is done on this earth. I want to be recognized for doing profound things and with that, I hope to leave a legacy that people would talk about and be proud of. 
  • Go Skydiving – I hate heights but at the same time, there is something about the idea of jumping out of a plane and free-falling and deploying a parachute and seeing the world from a whole other perspective. 
  • Start a Foundation – In a perfect world, I would love to start two completely different foundations. One, dedicated to my father, Ernie Richardson recognizes the sport of short track stock car racing and that helps kids find an outlet in the sport. I know now that the sport is ever-changing, but I feel like many kids that looked up to their dads or moms that raced want an outlet to do the same and I feel like a foundation that supports the short track racing industry could make a difference to many. I also would like to start a diabetes research foundation as well, living with a disease like this you always feel hopeful with the evolution of technology in healthcare that a cure is on the horizon. I would love to have a foundation that is dedicated to kids living with diabetes that have a place to come together and feel connected to someone in their shoes. 
  • Save a Life with my Career – My end goal is to become a diabetes educator for kids. I think a lot of people in the healthcare field hope that they can make a difference in someone’s life and change their outlook. Especially if I could change a kid’s life, it would mean the world to me.  
  • Learn to Line Dance – Me dancing is probably the definition of cringe.  If I could dance in general it would be great, but to line dance would be amazing. I’ve always loved country music and how they line dance so effortlessly. It’s a smooth transition and overall, a fun time.  
  • Own a Farm – To have a huge amount of land surrounded by cows, sheep, pigs and chickens would be perfect. I love animals and the homestead style of living. 
  • Throw a Lavish Dinner Party – I love to entertain friends, to throw a dinner party with several courses, place settings, over the top décor that would leave people talking about how it was the best dinner party they have ever been to.
  • Learn About my Dad’s Family History – I never knew any of my family on my dad’s side. I would love to dive into his family history, find some of my family members and hopefully connect to learn about them and stuff about my dad.
  • Kiss the Bricks at the Brickyard 400 – Nascar is a huge part of my growing up.  Watching races with my dad on Sunday mornings and afternoons was a ritual in the Richardson household.  The tradition of the Brickyard 400 is to kiss the bricks after a win.  Many fans can go down on the track and experience that firsthand. 
  • Go to the Daytona 500 – The Superbowl of Nascar, the first race of the season in Daytona Beach, Florida.  To experience a race like that would be a dream and to meet some of my favorite drivers would be a starstruck moment. 
  • Host a Podcast – I got the opportunity to be on a podcast with a dear friend talking about networking within one of my university clubs called Sisters. The experience overall was fun and just an easy, fun conversation.  I would love to host my own granted I have no clue what it would be called or what I would talk about, but it would be fun. 
  • Live a Portion of my Life without Diabetes – I think this is every diabetic’s dream.  It’s been almost 21 years and I cannot even remember what it was like to not deal with diabetes.  I’m hopeful one day pancreas transplants will be a norm and diabetes will be a thing of the past for many of us. 
  • Go to a Country Music Festival – Country music is my favorite, if I could travel all over to experience different country music festivals, I would be in heaven.

Whether the dreams or big or small, create your list, make it happen.  Make your life a little more interesting.

I am currently attending Central Washington University studying for my Master's in food and sciences to become a nutritionist and later a diabetes educator for kids.
