The Perfect Pasta to Help Get You Through Finals

Finals are coming up… fast… and it’s probably a very stressful time in your life. I don’t know about you but I tend to spend quite a lot of money eating out and buying ~comfort food~ during finals week. If you tend to do the same here’s a quick and easy homemade Penne Rosa (yes like the one from Noodles and Company) recipe to give you the same level of comfort food without the price tag.

The Stay at Home Chef

Here’s what you’ll need (this is for about 4-6 servings depending on how hungry you are):

  • 1 lb of penne pasta

  • Some olive oil for the pan

  • 8 oz of sliced mushrooms

  • 2 cloves of garlic

  • 1 ½ cups of marinara sauce (I’ve found that a little less is better depending on how tomato-ey you want the sauce)

  • ½ cup heavy cream

  • Red pepper flakes to taste

  • 4 Roma tomatoes

  • 3 cups spinach leaves

Wholefully

This recipe is honestly so easy and should only take you 15 minutes to cook! Here’s how:

  1. Cook the pasta.

  2. Head a large skillet on medium-high heat with olive oil.

  3. Add the mushrooms and let them cook until tender (~3 minutes).

  4. Add the garlic and let it heat for 1 minute.

  5. Add the tomatoes and spinach and let them cook for ~3-5 minutes.

  6. Pour in the cooked noodles, the marinara sauce, and the red pepper flakes.

  7. Add the heavy cream and stir until everything is mixed.

  8. Serve with your favorite cheese and enjoy!
