4 Healthy Super Bowl Sunday Dips

 

Want to make super yummy yet healthy food for your super bowl sunday?

I’ve made this list of yummy recipes for the perfect healthy dip!

 

Skinny Buffalo Chicken Dip

Ingredients:

  • 2 cups shredded chicken

  • ½ cup nonfat Greek yogurt

  • 8 ounces Neufchatel cheese, softened

  • 4 ounces crumbled bleu cheese (about 1 cup)

  • ½ cup hot sauce (such as Frank’s)

Directions:

  1. Preheat the oven to 350 degrees.

  2. Mix all ingredients together well.

  3. Bake in the preheated oven until hot and bubbly, about 20 minutes.

  4. Enjoy!

Skinny Queso

Ingredients:

  • 2 tablespoons unsalted butter

  • 3 cloves garlic, minced

  • 1 jalapeno, seeded and diced

  • 1 Roma tomato, diced, plus more for garnish

  • 2 tablespoons all-purpose flour

  • 2 cups Silk Unsweetened Coconut Milk

  • 3 cups shredded cheddar cheese

  • 1 teaspoon chili powder

  • 1/2 teaspoon cumin

  • Kosher salt and freshly ground black pepper, to taste

  • 1/4 cup plain Greek yogurt

  • 1 avocado, halved, seeded, peeled and diced

  • 2 tablespoons chopped fresh cilantro leaves

Directions:

  1. Melt butter in a medium saucepan over medium high heat. Add garlic and jalapeno, and cook, stirring frequently, until fragrant, about 1 minute. Stir in tomato until softened, about 1-2 minutes.

  2. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in coconut milk, and cook, whisking constantly, until slightly thickened, about 4-5 minutes.

  3. Stir in cheeses, a handful at a time, until smooth, about 1-2 minutes. Stir in chili powder and cumin; season with salt and pepper, to taste. Stir in Greek yogurt until well combined, about 1 minute.

  4. Serve immediately, garnished with tomatoes, avocado and cilantro, if desired.

 

Healthy 7 Layer Dip

Ingredients:

  • 2 Avocados, large

  • 1 15 oz. can Black beans

  • 1 15 oz. can Corn, whole kernel

  • 1/4 cup Green onions

  • 3 Roma tomatoes

  • 1 16 oz. container Cravings salsa, Fresh

  • 1/2 Lime (juice)

  • 1/4 tsp Paprika

  • 3/8 tsp Pepper

  • 3/4 tsp Salt

  • 1/2 tsp Cumin

  • 1 1/2 cups Greek yogurt, plain

  • 1 Queso fresco

Directions:

  1. To make the guacamole layer, combine avocados, lime juice, ¼ teaspoon salt and 1/8 tsp pepper in a large bowl.

  2. Mash ingredients with the back of a fork until desired consistency is reached.

  3. In a separate large bowl combine yogurt, cumin, paprika, ½ tsp. salt, and ¼ teaspoon pepper. Mix until well combined.

  4. Now layer all ingredients into a bowl

    1. Layer 1: Homemade Guacamole that is made with only avocados, lime juice, salt and pepper

    2. Layer 2: Greek Yogurt

    3. Layer 3: Salsa

    4. Layer 4: Black beans instead of refried beans.

    5. Layer 5: Whole kernel corn

    6. Layer 6: Fresh Roma tomatoes.

    7. Layer 7: Crisp green onions.

  5. Repeat the above step with the remaining ingredients.

  6. Serve with Tortilla Chips and enjoy!

 

Skinny French Onion Dip

 

Ingredients:

  • 2 Tbsp. butter or olive oil

  • 3 medium onions (red, yellow or white, or a combination), peeled and diced

  • 2 cloves garlic, minced

  • 1 1/2 cups low-fat or fat-free Greek yogurt (I love Fage)

  • 2 teaspoons Worcestershire sauce, to taste

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • pinch of cayenne

Directions:

  1. In a large heavy-bottomed pot, melt the butter over medium-high heat.  Add the onions and saute until well browned and caramelized (but not burnt), about 30-40 minutes, stirring every few minutes.  Add garlic and sauté for 1-2 minutes, until fragrant.

  2. Remove from heat and transfer the onions to a medium mixing bowl.  

  3. Refrigerate for 15-20 minutes or until the onions reach room temperature.  

  4. Add the remaining ingredients to the mixing bowl with the caramelized onions, and stir until the mixture is evenly combined.  Taste, and season with additional salt and pepper and extra worcestershire if need be.

  5. Serve immediately, topped with the reserved caramelized onions if desired
