I don’t know about you, but my favourite part of the holiday season is the food. There’s something about the colder months that makes you look forward to seeing your family and eating to your heart’s content. However, for vegetarians, we mostly arrive at holiday dinners with nothing to eat except mashed potatoes and overcooked vegetables. 

So, this year bring some of your own dishes to the table! Here are five recipes that are easy and practically foolproof.

 

The Best Vegetarian Stuffing Ever

In my family, stuffing is cooked inside the turkey, thus making it non-vegetarian. When I decided to give up meat, my grandma’s stuffing was one of the only things I missed. Now, at every Thanksgiving and Christmas dinner, I am tormented by the amazing stuffing I can no longer eat. But, this recipe can save you from the torture. It’s savoury with a twist from the apples and cranberries, but the best part is no animal was harmed to make this dish.

Ingredients: 

●     2 sticks salted butter

●     3 tablespoons fresh, chopped sage

●     1 large, white onion, chopped

●     1 carrot, finely chopped

●     3 stalks celery finely chopped

●     2 apples, chopped (with skins)

●     3 cloves garlic, chopped

●     1 can of vegetable broth

●     1/4 teaspoon cayenne pepper

●     1 loaf day-old french bread

Creamy Pumpkin Pasta

Okay, I know macaroni and cheese is already vegetarian, but I had to include this recipe. It’s rich and hearty with the perfect amount of posh from the chopped hazelnut garnish. This is a recipe you need to try!

Ingredients:

●    1/2 cup of hazelnuts

●     1 pound orecchiette pasta

●     4 tablespoons unsalted butter

●     1 medium onion red onion, finely diced

●     2 garlic cloves, minced

●     2 teaspoons minced fresh sage

●     One 15-ounce can pumpkin puree

●     Kosher salt and freshly ground pepper

●     1/2 cup of mascarpone cheese

●    1/4  cup of freshly grated Parmigiano-Reggiano cheese, plus more for serving

Pumpkin Pie with Maple Pecan Crumble

This is a twist on a classic holiday dessert, similar to all of the previous recipes. This recipe is so good, your whole family will want to try it!

●      15 oz pumpkin puree(425 g), 1 can

●      1 teaspoon ground cinnamon

●      ½ teaspoon nutmeg

●      ½ teaspoon ground cloves

●      2 eggs

●      1 cup of  heavy cream(240 mL)

●      1 teaspoon of vanilla

●      1 pie crust, prepared

Pecan Crumble 

●      1 ½ cups of pecan(185 g)

●      ¼ cup of maple syrup(85 g), plus 1 tablespoon
