Excited about Halloween because it gives you an excuse to make delicious treats? Her Campus Bucknell is! Here are some great snack and mocktail concoctions to spice up your Halloween week. They are great for parties, celebrating the holiday with your friends, or even distressing if you have a lot of work!

Snacks

Caramel Apples

Ingredients:

  • Apples
  • A bag of caramel candies, unwrapped
  • Orange juice
  • Small candies, nuts, sprinkles
  • Wooden sticks

Line a baking sheet with wax paper and spray it with vegetable oil cooking spray. Insert the craft sticks halfway into the stem-ends of the apples. Then, in a medium, heavy saucepan, over low heat, combine the caramel candies and orange juice. Cook, stirring occasionally, until the candies have melted and the mixture is smooth, about 10 minutes. Set aside to cool for 2 minutes. Dip the apples in the caramel until coated and sprinkle with small candies, chopped nuts or sprinkles.  Put them on wax paper, and allow caramel to harden, at room temperature, for about 2 hours. This is a fun activity to do with friends!

 

Halloween Popcorn Mix

Ingredients:

  • 3 TBSP. vegetable oil
  • 3 Microwaveable popcorn bags (unsalted and no butter)
  • 3 TBSP. butter
  • 1 TSP. pure vanilla extract
  • 6 Cups (12-ounces) mini marshmallows
  • 6 Fun-size caramel peanut chocolate bars (such as Snickers), cut into 1/4-inch pieces
  • 3 (3-inch) Chocolate chip cookies, crumbled
  • 1/3 Cup chopped salted almonds,
  • 1/2 Cup orange and black chocolate candies (such as M&Ms)

Spray the inside of a large mixing bowl with vegetable cooking spray and lightly spray a baking sheet. Set aside. Place popped popcorn in the bowel. In a medium saucepan, heat the butter over low heat. Add the vanilla extract and marshmallows. Stir constantly until the marshmallows have melted and the mixture is smooth, about 5 minutes. Pour the melted marshmallow mixture over the popcorn. Using a spatula stir until the popcorn is coated. Spread the mixture over the prepared baking sheet. Sprinkle with the chocolate bar pieces, cookies, almonds and chocolate candies. Using a spatula, gently press the toppings into the popcorn. Allow the mixture to dry for 1 hour. Break into 2-inch pieces when done, and enjoy! This is a good for a party!

 

DRINKS

Mexican Pumpkin Punch

Ingredients:

  • 2 Cups packed dark brown sugar
  • 4 Cinnamon sticks, preferably Mexican
  • 1 29-ounce Can pure pumpkin (about 3 1/2 cups)
  • 2 Limes
  • Splash of rum (if you are 21 or older)
  • Pineapple chunks, for serving (optional)

Combine 12 cups of water, the brown sugar and cinnamon sticks in a large pot and bring to a boil over medium-high heat, stirring until the sugar dissolves. Stir in the pumpkin and return to a simmer. Meanwhile, remove the zest from the limes in wide strips using a vegetable peeler; add the zest to the pot and simmer 15 minutes. Let cool, then refrigerate until the liquid is cold. Pour the punch into ice-filled glasses. Add, rum, and pineapple if desired. Serve with the cinnamon sticks. This is a great punch for a large Halloween party!

Witches Brew

Ingredients:

  • 1 (6-ounce) Package lime gelatin
  • 2 Cups boiling water
  • 3 Cups chilled pineapple juice
  • 1 (2 liter) Bottle chilled lemon-lime soft drink or ginger ale
  • 2 Cups chilled vodka (21 and older)
  • 1 Large punchbowl

Pour the gelatin mix into a large bowl. Slowly stir in the boiling water. Stir at least 2 minutes, until the gelatin is completely dissolved. Stir in the pineapple juice. Let cool to room temperature. Once cool, carefully pour the drink mixture into the punch bowl. Slowly add the chilled vodka (optional) and lemon-lime soda or ginger ale. Stir gently to mix.

Devin is a sophomore at Bucknell University. She is intending to be a Markets, Innovation and Design major in the School of Management, and is also pursuing a minor in Creative Writing.
