This year was my first time being vegan for any major holidays, starting with Thanksgiving! I didn’t really know what I was going to do — I mean, basically, everything at Thanksgiving dinner is non-vegan. So I asked my friend Pinterest what some great vegan Thanksgiving recipes are! I know Thanksgiving just passed, but who’s to say you can’t use these recipes all year long? Here are my favorite six recipes I found:

 

1. Appetizer: Vegan Walnut, Sage, and Cranberry Holiday Mushrooms

I absolutely LOVE stuffed mushrooms. When I went vegan I thought I would never eat good stuffed mushrooms again. My mother proved my wrong when she introduced me to this recipe! This recipe is great for any time between Thanksgiving and Christmas so it is definitely worth remembering!

 

2. Stuffing: Simple Vegan Stuffing

We love a simple recipe in my house! With everyone always on the go and with SO much to be done for the holiday season, it is super convenient to have a staple recipe that is easy to throw together! It is so simple it is only NINE ingredients: bread, lentils, olive oil, onions, celery, vegetable broth, flax eggs, dried sage, salt & pepper!

 

3. Side: Sautéed Zucchini with Mint, Basil, and Pine Nuts

Another simple recipe with minimal effort! It is literally all in the title! Throw it on a stove top and you have an amazing vegan-friendly side!

 

4. Potatoes: Rosemary Roasted Potatoes

You just cannot have Thanksgiving without potatoes. You can have potatoes in an ample amount of ways but nothing compares to roasted potatoes — especially during the holidays. I love the smell of rosemary and this may very well be my favorite item on the list. When you make this dish it fills the room with the scent of autumn.

 

5. Veggies: Holiday Roasted Vegetables

Thanksgiving is ALL ABOUT the sides! From cranberry sauce to sweet potatoes to asparagus to stuffing, nothing says Thanksgiving quite like sides! So here’s another super simple recipe for some more veggies! A vegan’s best friend is vegetables (specifically roasted veggies with rosemary)!

           

6. Pumpkin Pie

What’s a Thanksgiving dinner without dessert? Not a Thanksgiving dinner I want to be at, that’s for sure! You know I HAD to find a yummy dessert to make, and what better staple item to make than pumpkin freaking pie!

 

See? A meal can be delicious even if it is vegan. These items can even be enjoyed by non-vegans and vegans alike! The holiday season is all about giving thanks so don’t forget to give thanks for all the great food as well!
