Here are some yummy Halloween snacks you might even be able to make in the kitchen of your dorm! These seem quick, easy, and most importantly festive! Happy snacking colliegettes !

Pumpkin Snack Mix

Ingredients

·         4 cups popped popcorn (we used Kettle Corn)

·         1 1/2 cups cheerios (we used Honey Nut)

·         1 1/2 cup Rice CHEX

·         1/2 cup peanuts

·         1/3 cup brown sugar

·         1/4 cup light corn syrup

·         2 TB butter

·         1 tsp. vanilla

·         1/4 tsp. baking soda

·         1/2 cup candy corn

·         1/2 cup candy pumpkins

Instructions

1.       Line large pan with parchment paper.

2.       In a bowl mixed popped popcorn, cereal and peanuts. Spread out evenly onto parchment-lined pan.

3.       In a sauce pan, combine brown sugar, syrup and butter. Bring to boil and let boil for 2 minutes. Remove from heat and add vanilla and baking soda. Stir until mixed well. Pour over popcorn mixture and toss with a spoon until evenly coated.

4.       Bake at 250 for 15 minutes. Take out and stir. Bake for another 10 minutes. Let cool.

5.       Add in 1/2 cup candy corn and 1/2 cup candy pumpkins and mix well.

 

 

Carmel Apple Nachos

Ingredients

·         3-4 gala apples

·         3-4 granny smith apples

·         1/2 package Kraft Caramels (unwrapped) (or Ice Cream Caramel Topping)

·         1 TB water

·         white chocolate (vanilla) candy coating

·         mini chocolate chips

·         Heath toffee bits

Instructions

1.       Place heath bits and mini chips into separate bowls. It’s important to have these all ready so they can be sprinkled on as soon as the caramel and white chocolate are on.

2.       Cut a ziploc bag at the corner. This will be for the white chocolate for you to drizzle on.

3.       Cut your apples right before working on candy coating and caramel so they do not brown. Place on your prepared dish.

4.       Unwrap caramels and place in small pot with 1 TB water. Heat on low-medium temp until melted. (Or if you opt to use Ice Cream Caramel Topping skip this step).

5.       At the same time, melt white chocolate by placing candy coating in a small pot on low heat and stirring constantly until melted and smooth. Place in ziploc bag with cut corner as soon as it’s done.

6.       Drizzle white chocolate and caramel on as soon as they are melted and smooth. Sprinkle toppings (toffee bits and mini chips) on immediately.

7.       Serve immediately.

 

 

Candy Corn Popcorn Mix

Ingredients

·         1 Bag Plain Popcorn

·         3 Cubes Vanilla Coating or White Chocolate

·         1 Cup Candy Corn

·         Sprinkles

Instructions

1.       Make popcorn in microwave as instructed. Pour out into a bowl trying to make sure no un-popped kernels get in there. Set aside.

2.       Put cubes of white chocolate in a microwave safe bowl and melt as directed. I put mine in for 45 seconds and then did 15 second intervals until it was melted.

3.       Pour white chocolate over popcorn. Add candy corn. Mix until all well coated.

4.       Pour onto wax paper and sprinkle with Halloween sprinkles. Let set.
