Alright friends, hello beautiful people. It’s fall, its chilly, its November! How crazy is that?!

 If you’re anything like me, especially at the end of the semester you get so busy that it’s hard to always come 

home and make a good healthy dinner for yourself. I myself, rely heavily on my trusty crockpot. I can 

throw in a meal at the beginning of the day, set it on low, and then its all ready by the time I get home. I 

am here this week to share with you my favorite crockpot meal….you ready…..here it comes….crockpot 

taco soup!!  

Here are all of the ingredients that you will need for this dish:  

1. Chicken (2 breasts)  

2. Cream cheese (1 block)  

3. Black beans (1 can) 

4. Corn (1 can)  

5. Medium Salsa (1 jar)  

6. Taco seasoning (1 packet)  

7. Paprika (3 shakes)  

8. Shredded cheese (1 bag)  

You can use beef or turkey in place of chicken if you would prefer!!  

The next steps are SO easy!! All you have to do is dump everything into the crockpot, stir it all up, 

and set it on low!! I typically let this go on low all day long and before I head to work at 3 pm, I kick it up 

to high until I get home which is usually 2 hours!! Once you get home or those 2 hours are up take the 

chicken out, shred it with 2 forks and place it back into the crockpot. At this point you are ready to serve 

and eat!! Tortilla chips with this meal is a great addition. Feel free to add more paprika or a hotter salsa if 

you want more of a kick!!  

This is seriously so easy, so cheap, and SO yummy!! This is the perfect fall crockpot meal for a busy college kid 

schedule!!! :)
