It’s a two-for-one special this week! Since the weather is getting warmer, I thought I would share my absolute favorite summer dessert that is beyond refreshing. Lemon Lush is a melt in your mouth burst of freshness. This dessert is so light, so you can enjoy it in the summer without feeling bloated or heavy!

 

Here’s what you need:

  • 2 cups of all-purpose flour

  • 1 cup butter, softened

  • 1 packet of Jell-O Instant Lemon Pudding & Pie Filling

  • Milk

  • Cool Whip

  • 2 mixing bowls

  • Mixer

  • A 9” x 13” baking pan

 

Directions:

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. In one mixing bowl, mix together the flour and the butter until evenly mixed. Pour the mixture into the baking pan and evenly coat the bottom of the pan. Bake for about 20-25 minutes or until golden brown. Allow the crust to cool for about 10 minutes.

  3. In the other mixing bowl, prepare the lemon pudding by following the package instructions. Place the pudding in the fridge until it sets.

  4. Spread a thin layer of Cool Whip onto the crust.

  5. Pour the lemon pudding on top of the crust and cool whip and spread evenly.

  6. Spread another thicker layer of Cool Whip on top of the pudding.

  7. Place the Lemon Lush in the fridge to chill.

  8. Cut into squares and enjoy! ☺

Please note: this dessert must be kept refrigerated.
