Fun and Refreshing Spring Break Mocktails

It really doesn’t matter where you’re going this Spring Break! Whether it’s an exotic beach resort or staying at home, you’ll hopefully be enjoying a week of rest and relaxation. 

Here are some fun and rejuvenating non-alcoholic mixed drink recipes for you to enjoy at your leisure. If you’re like me and love experimenting with ingredients in the kitchen, get ready to take some notes.

Let’s start with something simple and soothing:

Mint Tisane

Ingredients:

  • Fresh mint
  • Fresh lemon verbena (optional)
  • 3 cups of boiling water
  • Sugar, to taste
  • Ice

Directions:

1.    Take your fresh mint and lemon verbena, including the stems, and place them in your favorite teapot.
2.    Pour boiling water over and allow the mixture to steep for 5 minutes.
3.    Add as much or as little sugar as you’d like to taste.
4.    Let the water sit and cool down. Place the teapot in the fridge to quicken this process.
5.    Serve over ice in a tall glass.
6.    Enjoy the fresh smell and taste of mint and lemon while sitting and reading on your porch swing.

For those of you that want to make regular lemonade a little more interesting:

Watermelon Lemonade

Ingredients:

  • 1 and ½ pounds sliced seedless watermelon
  • 1 and ½ cups cold water
  • Zest of 1 lemon
  • ¾ cup fresh lemon juice
  • ½ cup honey

Directions:

1.    Blend watermelon until very smooth.
2.    Strain through a coarse sieve over a bowl, stirring to push through any pulp.
3.    Pour the juice into a large pitcher and add lemon zest.
4.    In another bowl, whisk lemon juice and honey until honey is dissolved.
5.    Stir this mixture into watermelon juice.
6.    Stir in 1 ½ cups of cold water, cover and refrigerate.
7.    Serve over ice and garnish with lemon if desired.
8.    Enjoy with friends and family during an outdoor barbeque party.

Who doesn’t love a fresh Piña Colada??

Virgin Banana Piña Colada

Ingredients:

  • 2 very ripe bananas
  • 1 cup diced pineapple
  • 1 cup pineapple juice
  • ½ cup coconut milk
  • 3 cups of ice

Directions:

1.    Blend bananas, diced pineapple, pineapple juice, coconut milk, and ice.
2.    Simple as that! Serve with pineapple wedges as garnish.
3.    Enjoy during a pool party on an unusually but gladly received warm day.

For those of you who have fun ice cube trays:

Iced Fruit Punch

Ingredients:

  • 6 cups assorted fruit juices
  • 3 cups ginger ale
  • 3 cups seltzer water

Directions:

1.    Freeze juice in fun-shaped ice trays. (You can keep these delicious ice cubes for about a month in your freezer).
2.    Fill a glass to the top with your ½ cup assorted flavored ice cubes.
3.    Add ginger ale and seltzer water.
4.    Serve to the cute kids you’re babysitting and enjoy a tall glass all to yourself.

For those of you who are interested in trying a non-alcoholic mojito:

Mock Mojitos

Ingredients:

  • 4 to 5 sprigs of fresh mint
  • 1 lime
  • 1 ounce of simple syrup
  • 6 to 8 ounces of seltzer water

Directions:

1.    Mix the sprigs of mint with simple syrup in a tall glass.
2.    Add ice cubes.
3.    Squeeze half of one lime into the glass.
4.    Top it off with seltzer water and stir the concoction.
5.    Drop in the other half of the lime sliced in wedges and add a sprig of mint for garnish.
6.    Drink while sitting on a nearby dock enjoying the calm of a lake.
