As we dive into the heart of the fall season, you may be craving your grandmother’s chocolate chip banana bread or her deliciously sweet apple pie.  Everywhere you look you are taunted by pumpkin spice lattes and hot apple cider. You may be stuck in dorm rooms with no kitchens or if you do have a kitchen, there is limited time for baking. But, there is still a way to make those fall recipes you all know and love easily in your dorm rooms.

For those who have kitchens, a Mug Cake is an easy way to satisfy your fall cravings and not spend hours baking. Mug Cakes are a single serving cake cooked in a mug in your microwave. Most take about two minutes to cook and you can find a multitude of recipes online. Below is the recipe for a Nutella mug cake.

Ingredients:

4 tablespoons self rising flour
4 tablespoons white granulated sugar
1 egg
3 tablespoons cocoa powder
3 tablespoons Nutella
3 tablespoons milk
3 tablespoons olive or vegetable oil

To make the Mug Cake you combine all ingredients into a large mug, stir, and then heat in the microwave for 1 ½ to 3 minutes. Top it with chocolate syrup and whipped cream and you have one serving of cake in about 5 minutes.

For those of you without a kitchen, a great way to make your favorite fall drink is using a Keurig. Green Mountain Coffee makes a pumpkin spice coffee K-cup which only requires a Keurig and water. Dunkin Donuts carries a seasonal pumpkin flavored K-cup if you are a loyal Dunks-goer. Some brands also carry apple cider.

Halloween is one of the biggest holidays in college, so what better way to stay in the spirit even after the day is over than to make a Halloween-inspired dessert. This recipe only requires small square pretzels, Hersey’s kisses, and candy corn. In the microwave you should slightly melt the Hersey’s kisses and then place them on a square pretzel. Top it off with a piece of candy corn, and enjoy a delicious holiday treat!

 

Although the weather is getting colder, these easy recipes can brighten up your day. Sometimes all you need on a rainy Monday evening is your favorite mug cake, a hot drink, or a Halloween treat. Enjoy!
