Whether you’re a regular at The Plex or someone who just wants to maintain a healthy diet, it seems like protein is always a topic of discussion. However, many people might be putting too much of an emphasis on protein and don’t really need as much as they’re consuming.
This is good news for all of us… it’s one less thing to worry about and one more thing to have fun with. We can get creative with how we eat our daily protein and get it through dessert!
Who doesn’t love peanut butter cookies? (Unless you’re allergic to peanuts of course.) We all know that peanut butter is a protein packed food, but how can we make peanut butter cookies less about the sugar and guilt and more about the protein and nutrition? Peanut butter-flavored cookies made with a chickpea base are smooth, gooey, and delicious and are protein packed with the power of both peanut butter and chickpeas. Just one can of chickpeas generally contains between 24 and 25 grams of protein and two tablespoons of peanut butter generally contain 8 grams of protein. Are you already sold? Here’s the recipe:
Peanut Butter Chickpea Cookies
Preheat oven to 350 degrees Fahrenheit and in a blender, blend the following ingredients:
1 can of chickpeas
½ cup of peanut butter
¼ cup or pure maple syrup
2 tsp. of vanilla
1 tsp. of baking powder
Shape the batter into small cookies and place on a cookie sheet. After about 10-12 minutes in the oven, your cookies are finished and ready to eat! (I used chocolate chips to garnish, but the cookies still taste just as good without this step.)
Now when you get back from The Plex, you can grab a few cookies, and head out the door in no time.
