Pinterest Fun Fridays on Foster: Jelly Cookies

With Spring Break approaching, I’m running very low on food. So this recipe is amazing because it only required four things, all of which I had in my fridge. It was extremely easy to make and everyone loved them. Keep reading to learn how to make this delicious treat.

This Week: Shortbread Cookies with Jam, inspired by The Comfort of Cooking

The Ingredients

  • 2 cups flour
  • 1 cup butter (two sticks)
  • ½ cup sugar
  • Powdered sugar (which I did not have)
  • Jam (I used strawberry rhubarb jam)

Baking the Cookies

  • Mix the sugar and butter together until fluffy
  • Add flour little by little
  • Knead dough
  • Form into a ball and put it fridge until firm
  • Take half the ball and roll it out
  • Cut out circles and cut shapes in half of the cookies
  • Bake at 350 degrees for 15 minutes or until golden brown
  • Let cool
  • Spread jam on bottom cookie and place cookie with cut-out on top

These cookies were yummy, but not over the top amazing. They’re great for snacking or cuddling up with your roommates during a snow day and watching a movie.
