On August 1st of this year, I decided to become a vegan. While I was home, it was pretty easy for me to make my own vegan dishes, but since I’ve been back on campus, it’s been a bit challenging to find vegan options that don’t revolve solely around carbs. I’ve been at school for about a month now, and lately, it has become harder and harder for me to find healthy options on campus, so I did some research. I found some healthy dishes that are available in about every dining hall. I’ve broken down what a typical day would look like below, but of course, it is possible to mix and match a few options from the dining hall menu to make sure you have a well-balanced diet. Enjoy!
Breakfast:
- Variety of Cut Fruit
- Overnight Oatmeal with Almond Milk and Chia Seeds
- Crispy Breakfast Potatoes
Lunch:
- Salad Bar: leaf lettuce, kidney beans, chickpeas, tomatoes, cucumbers, tofu, and balsamic vinaigrette
- Soup:
Tomato Basil
Three Bean Chili
Sweet Potato Chipotle
- Sandwich:
Vegan Falafel Sandwich
Dinner:
- Mexican Plate: Black beans, Mexican rice, salsa, guacamole, and plantains
- General Gao’s Bowl with Tofu
