Try Lauren Conrad’s Favorite Cocktail From Her New Book, ‘Celebrate’

Although spring has just begun, there’s no denying that we’ve all been in a summer state of mind. So, to give you some warm weather inspiration, we want to share with you some super exciting news and a yummy cocktail recipe.

After getting our hands on a copy of the book, we knew we had to try one of Conrad’s favorite cocktail recipes—the classic and tropical Piña Colada, of course! 

What you’ll need: 

  • 1 1/2 ounces of light rum
  • 4 ounces of coconut cream 
  • 4 ounces of pineapple juice 
  • 1 cup of ice
  • Blender 
  • Measuring spoons or cup

LC’s recipe calls for two ounces of coconut milk and two ounces of pineapple juice, but after a few taste tests, we decided to go with four ounces of coconut cream and four ounces of pineapple juice.

Coconut cream is a lot sweeter, thicker and richer than coconut milk, and we have quite the dangerous sweet tooth if you couldn’t already tell. We doubled the pineapple juice just out of personal preference.

For the light rum, we went with Malibu Original, but feel free to use any other kind. Bacardi Coconut or Bacardi Pineapple Fusion also work well for Piña Coladas.

Step One

In a blender, add one cup of ice, one-and-a-half ounces of light rum, four ounces of coconut cream and four ounces of pineapple juice. Blend until smooth. 

Make sure you give the mixture a taste test; you might want more or less of any given ingredient. 

Step Two

Garnish with whipped cream, cherries, an orange slice and/or umbrella. Enjoy!
