A little over a week ago, the three of us decided to be vegan—just for a week! Why? We’re not exactly sure. It was Windsor’s idea initially, and Stephanie immediately jumped on board. Annie, the only meat-eater of the three of us (Windsor and Stephanie are basically vegetarians to begin with) was the hardest to convince—but after a little prodding, she came around too. And so our vegan week began!
We switched our skim milk to soy, and our grilled cheeses to PB&J’s. We feasted on peanut butter, Boca burgers, and Cracklin’ Oat bran (not together).

Luckily for us, the huge variety available in Harvard’s dining halls made sticking to a vegan diet relatively easy. But did we mess up?
Windsor: I totally forgot and ordered an egg white omelet for breakfast one morning—oops!
Annie: I accidentally ate a glazed donut the other day…….I swear I didn’t know it wasn’t vegan! :)
What was the hardest part?
Stephanie: I missed dessert! The vegan dessert options were quite limited. I also really like eating a Special K bar for breakfast in the morning on my way to class or the gym—but those were off-limits.
Moral of the story? I don’t think any of us is ready to convert to full-on veganism quite yet—but we had fun trying!
