It’s been one of those weeks. After butt-kicking workouts, two tests, a term paper, three projects, a radio show and multiple meetings, I am exhausted.
Though the walks to campus have gotten a little easier with my newly shaped leg muscles (who knew working out actually works?!) and that little muffin top that hangs out around my belt is shrinking, I’m wearing a little thin. I need sugar.
I’m a chocolate fiend; for as long as I can remember it’s been a huge comfort item for me. Some of my fondest memories are of coming home to the smell of one of my mom’s cakes in the oven, picking out the cream-filled pieces in my Valentine’s Day candy box, and that magical time of year when those little badge-ridden Girl Scouts camp out in front of Stop & Shop and waiting to pounce and fill my bag with their cookie goodness. I like my chocolate.
So when I started the SELF Magazine Jumpstart Diet, I forgot about my chocolate weakness. I had visions of preparing delicious salads, looking fabulous and fit in the gym and getting into a certain little black dress; but, I failed to think about all the things I wouldn’t be able to eat.
Well, I refuse to do that. Like I’ve said before, I don’t think dieting means giving up the things you love, just finding new ways to enjoy them.
So to the store I went! With a few alternatives (like half as much sugar with Splenda, low fat and low cholesterol margarine and cocoa powder) I made this delicious cookie recipe in brownie form.
A few dirty bowls, some chocolate-covered beaters and quite a bit of cocoa powder on my white shirt (didn’t really plan my wardrobe very well for this) later, the oven was pre-heated and ready to make my chocolate dream happen.
Twenty minutes passed and I had delicious, low calorie and of course oh-so chocolatey brownies. Elated.
Maybe I’ll throw in a few more squats and a couple more pushups to make up the difference, but it was soo worth it.
