Last weekend a woman from my church hosted a thanksgiving cooking night where she taught college students (like me!) how to cook thanksgiving dinner! We learned how to make everything from appetizers to entrees to dessert! The cranberry relish we made was my favorite. At the end of the night, our hostess gave us each a copy of all the recipes we had used that evening.
Here is the recipe for Cranberry Relish that we used:

Ingredients:
2 – 12 oz. bags of fresh cranberries
1.5 cups of pecan pieces
1 – 12 oz. jar of orange marmalade
3.75 cups sugar
4.5 teaspoons of fresh lemon juice
.75 teaspoon of cinnamon
3 tablespoons of Grand Marnier
3 tablespoons of Courvosier Brandy
Toast pecans for 5 min in 350 degree oven. Rinse cranberries, mix with sugar and cinnamon in a 13×9 pan. Cover tightly with foil and bake at 350 for one hour, stirring once during baking. In a saucepan, combine marmalade, lemon juice, and pecans. Stir over low heat until melted, add liquors. After one hour, remove cranberries from oven, stir in marmalade mixture. Pour relish into jars for storage. May be canned for storage or gifts and will keep indefinitely in the fridge!
Makes: 1.5 quarts (it’s a lot!)
