A Struggle Meal With a Hint of Classy

Sometimes, when I’m in a rush to cook something for a group of people, or I’m on a budget, or when I just don’t feel like cooking, I like to make a dish that says “hmm… yes… we might be dead inside but we are absolutely eating tonight.” I like to call it Butter Basil Lemon Pasta, and it hits every time. It’s really easy to make (you just need butter, basil, lemon, and pasta) inexpensive and is sure to delight the masses. This dish has notes of spring and a dose of freshness, and its added easygoing nature makes it an instant classic.

Ingredients

  • Butter
  • Basil
  • Freshly squeezed lemon juice
  • Pasta of your choice
  • Optional: grilled chicken or shrimp

Steps

  • Prepare pasta – bring a pot of water to a boil, add the pasta, and strain when ready.
  • Add in the butter, squeeze in lemon juice, and stir nicely.
  • Serve and garnish with basil.

This pasta is super easy to make and I love to make it whenever I’m tight on time, money, energy, or just feel like having a fresh yet fulfilling meal. I also love making this whenever I have friends or family over on a nice spring day. If you’re looking for something a little more hearty, I’ve found that a great pairing is grilled chicken or shrimp. Now serve it with a chilled glass of white wine and you have yourself a crowd-pleaser.
