Happy St. Patrick’s Day! Just in case you don’t have any fantastic plans, and you’re feeling hungry, here’s a festive recipe you can try out. I can vouch for it; it’s my mom’s, and she made three batches this past week, trying to get it just right. That means that I tasted three batches. They were all good! Plus, I think the picture speaks for itself.
Serving size: 8-10 servings
You will need non-stick cooking spray, a large bowl, a smaller bowl, and a 9’’ round glass pie dish.
Ingredients:
3 cups all purpose flour
1 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
4 tbsp. sugar
1 ½ cup low fat buttermilk
¼ cup low fat sour cream
3 tbsp. melted butter
Directions:
Preheat oven to 350 degrees.
Mix dry ingredients – flour, salt, baking soda, baking powder, sugar – in large bowl.
Mix liquid ingredients – buttermilk, sour cream, and melted butter – together in a smaller bowl.
Make a well in dry ingredients. Pour liquid ingredients into center. Mix by hand only until dry ingredients are blended. Do not over mix.
Spray pie dish with non-stick cooking spray.
Drop dough into dish and spread evenly. Dough will be sticky.
Bake in oven for 30 to 35 minutes, or until lightly browned.
Place on rack to cool for 15 minutes before cutting. Serve warm.
