I was feeling sick yesterday and writing my blog post definitely slipped my mind–so I missed that plus my extra workout, but to make up for it, I made a healthy dinner for me and my mom!
One of the Jump Start Diet‘s 400-calorie dinner options is for Mediterranean Baked Salmon. Since I love seafood and am finally starting to take a stab at cooking, I thought this was a perfect meal to try.
Mediterranean Baked Salmon Recipe:
- Rub a tablespoon of olive oil on 3 oz. wild salmon
- Coat baking pan with 1 tsp. olive oil
- Slice 1 red bell pepper, ½ fennel bulb and 10 small black pitted olives
- Sprinkle dish with 2 tsp. chopped fresh organo and pepper
- Bake at 375° for 10 minutes; turn, and continue cooking for 15-20 min. until cooked through
- Drizzle with lemon juice
- Serve with ½ cup cooked quinoa
I made a few changes, a lot actually. When I went to the grocery store, I saw they were selling salmon stuffed with crab meat and I fell in love. I’m from Maryland, I love crabs, so I had to pick it up. I left out the bell pepper and olives because I hate them. Sorry, but when it comes to certain vegetables I revert to age 5 and refuse to eat certain things!

I also chose to serve the bake salmon with an avocado salad. Eating avocados is something new that began with my journey to lose the freshman 15— I’ve seriously have never had one before! They’re really good, and even more when I know that they help your belly be less bloated and help our bodies absorb carotenoids, a cancer-fighting compound found in certain foods like tomatoes, carrots, spinach and winter squash. According to SELF, “people who ate salads with avocado had 15 times higher absorption of carotenoids.”
