Six cocktails to try this summer

Toss that Busch Lite and make yourself one of these sexy summer cocktails! Make these drinks alcoholic or non-alcoholic, and then kickback and enjoy the summer weather.

 

Monkeylada

-2 ripe bananas
-1 cup diced pineapple, 4 wedges for garnish
-1 cup pineapple juice
-1/2 cup “lite” coconut milk
-3 cups ice cubes
-6 oz light rum
 
TO MAKE: Puree bananas, diced pineapple, pineapple juice, coconut milk, and ice in a blender. Then, stir in rum. Divide among 4 glasses. Garnish with pineapple wedges.

Watermelon Gin Fizz

5 cups diced watermelon
-6 oz. gin (omit for non-alcoholic version)
-8 tablespoons lime juice
-1 1/3 cups ginger ale
-Lime wedges for garnish
 
TO MAKE: Freeze 1 cup watermelon for garnish. Puree the remaining 4 cups watermelon. Strain and divide the juice among 4 ice-filled glasses. Top each with 1 1/2 ounces gin, 2 tablespoons lime juice, and 1/3 cup ginger ale. Lastly, garnish with the frozen watermelon and lime wedges.

Summer Fruit Punch

-2 cups diced fruit (your choice)
-2 cups apricot juice
-2 cups sparkling wine (or sparkling cider for non-alcoholic punch)
-1 cup seltzer
 
TO MAKE: Combine diced fruit, apricot juice, sparkling wine, and seltzer. Then, divide among 4 ice-filled glasses.

Hula Dancer’s Delight

-2/3 oz. SKYY Infusions Pineapple
-1/2 oz. vanilla rum
-1 oz. lychee puree
-Splash of fresh lemon juice
-3 oz. pineapple juice
-Grenadine

TO MAKE: Shake and strain into a rocks glass, then add a little Grenadine. Garnish with floating orchid.

Baileys Cool Raspberry

-2 oz. Baileys Original Irish Cream
-8-9 raspberries
-Crushed ice
 
TO MAKE: Place 4-5 raspberries at the bottom of a rocks glass and lightly “muddle” them. Top with crushed ice. Add Baileys Irish Cream. Garnish with three speared raspberries.

Berry Mojito

-5 fresh mint leaves
-1 teaspoon granulated sugar
-4 wedges lime, juiced
-2 oz. Bacardi Razz
-1/4 oz. Chambord
-1/4 oz. blue Curaçao
-1 splash club soda
-Mint, for garnish
-Raspberries and blueberries, for garnish
 
TO MAKE: In a glass, crush the mint with a fork. Add sugar and lime juice then stir. Add Bacardi, Chambord, and blue Curaçao mix. Lastly, top with club soda and garnish.
