This caprese salad is light and refreshing and less than 100 calories. This salad is perfect for a cooling snack after a long day of classes.
Caprese Salad
4 medium tomatoes chopped
¾ cup of diced mozzarella
2 tablespoons chopped parsley
¼ cup chopped basil
Salt and pepper to taste
Olive oil
Chop all of the ingredients into bite-size pieces. Mix in a large mixing bowl and stir. Add a drizzle of olive oil if desired.
