Turkey Salad Sandwich:

A healthy twist on those Post-Thanksgiving Leftovers!

As you headed back to school after Thanksgiving, it’s no surprise that your parents have tried (and probably succeeded) to get you to take some leftovers. I urge you to EMBRACE the leftovers for this healthy twist on a classic lunch.

You will need:

  • 3 slices of white-meat turkey

  • 2 table spoons of craisins

  • 1 1/2 table spoons of plain Greek yogurt

  • 2 slices of multigrain bread (toasted)

  • 1 large leaf of lettuce

First, shred the turkey with a fork and place in a bowl.

Next, add the Greek yogurt and mix together with a fork.

Add the craisins, and continue to mix until well-distributed.

Place the mixed ingredients on your multigrain toast and garnish with the lettuce.

And voila! A tasty, protein-heavy lunch!
