3 Healthy and Quick Meals You Can Whip Up During Finals Week

We all know how the stress of final exams can get to us and having an onigiri or a cup of instant noodles may seem like the most time-saving and convenient choice when we are cramming for finals. Unfortunately, our bodies won’t be too happy with these unhealthy choices that we make. To help us all eat better, Her Campus Waseda has prepared 3 recipes that are both time-saving and nutritious! Check out these healthy and quick recipes for the busy finals period! 

1. Avocado Egg Sandwich

An avocado’s creamy texture makes it a good filling for sandwiches and it’s also full of healthy goodness – vitamin C, dietary fiber, and potassium just to name a few!

Ingredients (serve 2):

Directions:-Cut the boiled egg and avocado into small pieces-Put all the ingredients in a bowl and mash it with a fork-Season with salt, pepper and lemon juice- Place baby leaf onto your bread slices and spread avocado and egg over them, close your sandwich and serve!

 

2. Lime Chicken Tacos

Full of flavor, this lime chicken taco is sure to spice up your taste buds! It is quick and easy to prepare, and you can also get creative with what you want to add into it!

Ingredients:

Directions:-Saute the chicken (diced) in the pan over medium high heat for about 3 minutes-Add salt, pepper, tomato and green onion and saute for another 3 minutes-Heat up the taco with a pan or the oven-Put the cooked ingredients and lettuce into the tortilla and serve!

 

3. Spinach and Tomato Pasta

This pasta is contains healthy, organic spinach and fresh tomato. The highly-nutritious tomatoes are complemented by adding spinach to the mix, providing an additional variety of essential vitamins and minerals, such as iron, Vitamin C, and potassium.

Ingredients:

Directions-Cook pasta in boiling water-Meanwhile, chop up the other ingredients-Heat up a frying pan and sauté the garlic, tomatoes and spinach until they are cooked-Strain the pasta and add it into the frying pan and toss-Season with black pepper and salt and serve!
