While being away at college, it’s may be hard to find time to make delicious recipes that remind us of home. Luckily, my mom taught me many recipes that are under $20 and only take about 20 minutes to make. Here are 3, easy recipes that will be sure to make your taste buds happy.
Fiery Shrimp Pasta
What you’ll need:
o 1 box of fettuccine noodleso 2 tablespoon olive oilo 1 tablespoon buttero 4 cloves garlico ½ lb. peeled & deveined shrimp (fresh or frozen)o 1 (15. oz.) can of diced tomatoeso ¼ tsp crushed red pepper flakeso ¼ tsp salto freshly cracked pepper to your likingo 1 handful of fresh parsley
Instructions:
1. Bring a large pot of water to a boil, add the pasta, and continue to boil for 8 minutes, or until tender. Drain the pasta in a colander.
2. While the pasta is cooking, add olive oil and butter to a large skillet and place over medium heat. Mince the garlic while waiting for the butter to melt.
3. Rinse the shrimp with cool water and allow the excess water to drain away. *If you are using frozen shrimp make sure to have it thawed out beforehand* Add the shrimp and minced garlic to the skillet. Sauté the shrimp and garlic for 3-5 minutes, or just until the shrimp turns slightly pink (no longer grey and translucent). Remove the shrimp from the skillet and set it aside until later.
4. Now, in the skillet add the whole can of tomatoes (do not drain) to the skillet, along with the crushed red pepper flakes, salt, and some freshly cracked pepper. Stir to combine and let the sauce simmer over medium heat for about five minutes.
5. When the sauce has thickened slightly, add the cooked and drained pasta. Toss to coat in the sauce. Add the cooked shrimp back to the skillet and toss to combine with the pasta.
6. Roughly chop a handful of parsley leaves and sprinkle over top before serving.
Turkey Lettuce Wraps
What You’ll Need:
o 1 tablespoon olive oilo 1 pound ground turkeyo 2 cloves of minced garlico 1 diced oniono 1/4 cup hoisin sauceo 2 tablespoons soy sauceo 1 tablespoon rice wine vinegaro 1 tablespoons freshly grated gingero 1 teaspoon Sriracha, or more, to tasteo 2 green onions, thinly slicedo salt and black pepper, to tasteo 1 head butter or iceberg lettuce
Instructions:
1. Heat olive oil in a saucepan over medium high heat. Add ground turkey and cook until browned (about 3-5 minutes). Make sure to crumble the turkey as it cooks; drain the excess fat.
2. Stir in garlic, onion, green onion, hoisin sauce, soy sauce, rice wine vinegar, ginger and Sriracha until onions have become translucent, about 1-2 minutes. Season with salt and pepper, to taste.
3. To serve, spoon several tablespoons of the turkey mixture into the center of a washed lettuce leaf, taco-style.
Guacamole
What You’ll Need:
o 2 medium ripe avocadoso 1 can of black beanso 1 can of whole kernel sweet corno 1 envelope Italian dressing seasoningo ½ of a limeo 1 tomato (optional)
Instructions:
1. Cut avocados in half and remove the pit. Scoop out contents and put in a medium-large mixing bowl. Mash and stir avocados.
2. Rinse the black beans in a colander under cool water, and then put into bowl with avocados. Drain the juice from the can of corn, and then put into the mixing bowl. *If you want tomatoes in it, dice tomato and place into bowl* Sprinkle Italian seasoning on top.
3. Mix all contents. Then squeeze the half lime on top and serve.
