October is already in full swing and by now, you may even be approaching your second round of exams. A great way to unwind is with some good ol’ girl’s night in baking. There is always one flavor that comes to mind when fall comes around: pumpkin.

Every year we go crazy for pumpkin flavor in just about anything you can think of. Why rely on food chains and brands to make your favorite pumpkin flavored food or drink when you can make it yourself? Here are five mouth-watering pumpkin recipes worth a try. It is your favorite classic pumpkin pie but with a twist. Roxana’s Home Baking has a great recipe for these cute mini pumpkin pies. With a small bit of whipped cream on top, you will have the cutest pumpkin treat on campus. Directions can be found in the link. 

Ingredients: 

Crust

  • 2 cups all purpose flour
  • 1/2 cup diced cold butter
  • 1/2 teaspoon salt
  • 3 tablespoons iced cold water

Filling

  • 2 eggs
  • 1 can pumpkin 
  • 1 cup whipping cream
  • 1/2 cup packed brown sugar
  • 1/4 cup corn syrup
  • 1 tablespoon pumpkin pie spice
  • 1/2 teaspoon salt

  • 3 1/2 cups quick cooking oats
