4 Easy Fall Treats

Summer was great, but we’re all thinking it at this point: BRING ON FALL. Sweaters, scarves, and everything pumpkin spice. It’s time to embrace the changing leaves with open arms and accept the chill. One of the best parts of fall? The baked goods. Here is a list of 4 easy treats to make so you can fully appreciate the season.

1. 2-Ingredient Apple Pie Cups

  • What you’ll need:
    • 1 can cinnamon rolls with frosting
    • 1 ⅓ cups apple pie filling
  • Steps:
  1. Heat oven to 375℉. Get a muffin tin and spray 8 cups with cooking spray. Take the dough and separate it into 8 rolls. Push dough into and up the sides of the muffin tin cups.
  2. Scoop 2 heaping tablespoons of the pie filling into the dough cups.
  3. Bake for 14 to 18 minutes or until a golden brown color. Cool for 5 minutes in pan.
  4. Microwave the icing for 8-10 seconds. Transfer the pie cups to a serving plate and drizzle the icing on top. Best served warm!

2. Pumpkin Snickerdoodle Cookies

  • What you’ll need:
    • ½ cup melted unsalted butter
    • ¼ cup brown sugar
    • ½ cup granulated sugar
    • 1 tsp. vanilla extract
    • 6 tbsp. pumpkin puree
    • 1 ½ cups all-purpose flour
    • ¼ tsp salt
    • ¼ tsp baking powder
    • ¼ tsp baking soda
    • 1 tsp ground cinnamon
    • ¼ tsp ground nutmeg
    • ¼ tsp ground cloves
    • For cinnamon sugar mixture:
      • ¼ cup granulated sugar
      • ½ tsp ground cinnamon
  • Steps:
  1. Using a medium bowl, whisk the following ingredients until there are no brown sugar lumps: melted butter, brown sugar and granulated sugar. Mix in the vanilla and pumpkin until the consistency is smooth. Set aside.
  2. Mix dry ingredients: flour, salt, baking powder, baking soda, cinnamon, nutmeg and cloves. Next, pour the wet ingredients into the dry and mix together until dough is soft.
  3. Cover mixture and chill for at least 30 minutes (this is essential!).
  4. Remove the dough from the fridge and preheat the oven to 350℉.
  5. In a small bowl, mix the remaining granulated sugar and cinnamon. Set aside.
  6. Roll dough into balls that are about 1 ½ tbsp and coat them with the cinnamon sugar mixture.
  7. Spread out on cookie sheet and press to flatten them down slightly.
  8. Bake for 8-10 minutes. Allow to cool on the pan for another 10 minutes. Enjoy!

3. No Bake Oreo and Pumpkin Cheesecake Parfaits

  • What you’ll need:
    • 2 cups oreo crumbs
    • 4 tbs melted unsalted butter
    • 8 oz softened cream cheese
    • ½ cup sugar
    • 1 cup pumpkin puree
    • 3 tsp pumpkin pie spice
    • ½ tsp ground cloves
    • 1 tub frozen whipped topping, defrosted
    • Mini oreo cookies (optional for garnish)
  • Steps:
    • In a small bowl, mix the oreo crumbs and melted butter. Set aside.
    • Thoroughly combine sugar and cream cheese. Next, stir in the pumpkin puree, pumpkin pie spice and ground cloves. Fold in the whipped topping and set in the fridge for 15 minutes.
    • While the mixture is chilling, set up 8 glasses. Add 2 tbsp of the cookie crumb mixture to the bottom of the glasses.
    • After chilling, spoon (or use frosting bag) half of the cheesecake mixture into the glasses and layer with another 2 tbsp of cookie crumbs. Spoon in remaining cheesecake mixture. Garnish if desired.
    • Refrigerate until serving.   

4. Slow Cooker Baked Apples

  • What you’ll need:
    • 6 baking apples
    • ¼ cup brown sugar
    • ¼ cup rolled oats
    • ¼ cup all-purpose flour
    • ½ tsp cinnamon
    • ¼ tsp nutmeg
    • ⅛ tsp ground cloves
    • 4 tbsp cold butter
  • Steps:
    • In a medium bowl, combine the following: brown sugar, oats, flour, cinnamon, nutmeg and cloves.
    •  Dice the butter and add it to the mixture by gently squishing it through your fingers (after you wash your hands, of course!) Small chunks of the butter remaining are okay. Set the mixture aside.
    • Core the apples, but be careful not to go all the way to the bottom.
    • Add ½ cup of water and then the apples to the slow cooker.
    • Fill each apple with the mixture.
    • Cook at either 1.5-2 hours on high or 4 hours on low.
    • If desired, halfway through cooking, add more mixture!
    • Apples are done when they are soft to the touch.
    • Serve warm, and add some ice cream if you’d like!
